Root Beer Bundt - I Like Big Bundts
Root Beer Bundt

It's Day #11 of I Like Big Bundts...the Food Librarian's quest to present 30 bundts in 30 days! Did you know that November 15th is National Bundt Day? I cannot lie...I like Big Bundts and encourage you to make a Bundt on November 15th...or anytime!

When I fly, I always get Ginger Ale on the plane. I think it makes me feel grown up.

When I'm in front of a vending machine and they have Squirt, my quarters quickly get thrown into the machine. That citrus goodness is one of my favorites.

But, if they have root beer, I'm there.

This Root Beer Bundt is from the Baked cookbook (original cookbook). It has been made a lot (just google it) and it is worth making. The cake is soft and moist, and the frosting is smooth and yummy.

Thanks to my friend JustJenn for making this logo and for her support! ;)

Using a 12-cup Nordic Ware classic Bundt pan, this makes a pretty darn good looking Bundt! :)

The frosting is easy to throw together - you mix it in the your food processor. I don't like frosting (I know some of you are horrified by this :) so I only made 1/2 the frosting. It is mainly because I was running low on cocoa powder, but I think 1/2 the frosting was enough. But don't listen to me, I would have eaten it plain.

The root beer flavor is pretty subtle. There is more chocolate flavor. I wish I had added some root beer extract to boost up the flavor a bit.

Make it a Root Beer Bundt Float by serving this with a scoop of vanilla ice cream!

See you back here tomorrow for (hopefully) another Bundt! (I'm flying back to Los Angeles on Wednesday, and hope my little plane isn't delayed or anything.) - mary the food librarian

Your ginger ale comment, me too! I always, always get it. I think it not only makes me feel like a big girl, but I think it is the right thing for my tummy. LOL!! My five year old loves Root "BEARD". He would love this cake.

I've been lurking from afar, but wanted to post. I read your blog first thing in the AM - which does NOT lend itself well to an empty stomach :-)

I'm making JustJenn's Maple Pumpkin bundt to bring to my MIL's house for Thanksgiving...but I'm really liking the idea of the root beer bundt. (Did you do this one for JustJenn to make up for the banana-aversion one the day before? LOL)

Also - what do you do with all of these bundts? Eat them? Freeze them? Give them away with pieces missing after you lovingly photograph them for posterity?

Thanks for the inspirations. I will resume my passive appreciation of your work :-)

yours looks gorgeous and I am SO impressed that you are doing this challenge yet again--it's so much fun for the rest of us to read but i can't imagine how much work it is for you! bravo!

I love root beer too - I made this last year and also wished it had a bit more root beer "oomph." But mine was definitely not as beautiful and rich-looking as yours!

I made this using Dr. Pepper last year and it was one of the richest cakes I've ever had. I used the full amount of frosting and had enough to cover the entire cake- a half batch is perfect I think.

This one is a favorite of mine! I made it into cuppies and scooped a giant scoop of vanilla ice cream on top! Best decision EVER!

Ps. If you let the cake sit (covered) for a day, the root beer will shine through.

That looks delicious and exactly like the one in the book -- great job! I will be making a bundt for national bundt day. I can't wait!

I made this cake three times last year. I completely love it. It stays moist for days, too.

Mm, root beer - now I want a root beer float! A root beer bundt would do nicely too. Yours looks amazing!

I've had this recipe bookmarked for eons, but never got off my rear to make this bundt. Now that I'm reading all of the great reviews, I've got to try it for myself!

I would have never thought of making a root beer flavored bundt...it has to be scrumptious!

I'd not of thought of a root beer flavored Bundt either, but it sounds so delicious.

This is such a good recipe! I actually had already found and made this recipe from another source before I saw it here. Just posted today on my blog though. I halved the recipe and made a mini bundt- SO GOOD!
