One of the best times of the year is Girl Scout Cookie Season! And what better way to bake with seasonal ingredients than to use Thin Mint Cookies!!!

I've made these before, but those scones were square and I wanted to tell you about the ease of scooping your scones. Well, there isn't much to tell. It's EASIER. It's FASTER. It's perfect when you are baking at 4 am!

It's really easy to make scones. One bowl and no mixer. Doesn't get much easier than that!
Cut in the cold butter - you can use a pastry cutter, two knives or your fingers. Rough chop a sleeve of Girl Scout Thin Mint cookies. The packages seem to get smaller and smaller...I think this package has 16 cookies in one sleeve. Add this to the dough and mix to blend. Then you just stir in some heavy cream and mix together, but don't overmix. I use a scooper to make the scones - sometimes I make bigger scones with a bigger scoop, or more scones with a smaller scoop. You may need to press the dough into the scoop so everything holds together.

Brush an egg wash on the scones or you can use some extra heavy cream. I sprinkle some sanding sugar on top, but sugar in the raw or granulated sugar would work too. The "bigger" sugar gives a really nice crunch.

Recipe: Thin Mint Scones
Adapted from: Cream Scones from the Art and Soul of Baking (page 152). This is a very good book - find it on Amazon or in your library.

Scone Dough:
2 cups (10 oz) all-purpose flour
1/4 cup (1 3/4 oz or 50 grams) granulated sugar
2 1/2 t baking powder
1/4 t salt
1 stick butter (4 oz) (cold, cut into pieces)
1 cup (8 oz) heavy whipping cream (cold)
1 c chopped Girl Scout Thin Mint cookies (one sleeve of 2016 cookies was 16 cookies)

Topping:
1 egg, lightly beaten OR more heavy whipping cream
2 T sanding sugar or granulated sugar

1. Preheat over to 425 degrees
2. Mix together dry ingredients.
3. Using a pastry cutter, two knives or your fingers, cut in the butter. (The book uses a food processor, but I like to make scones by hand...less to clean up!). Add the chopped Thin Mint cookies.
4. Pour in whipping cream. Blend together quickly (I use my hands and/or a spatula). Do not overmix.
5. Scoop scones (or you can form into a circle or square and then cut shapes).
6. Place on parchment or Silpat covered baking sheet. Brush with egg wash or heavy cream. Sprinkle with sugar.
8. Bake for 14-16 minutes (depending on your oven and size of scone) until golden brown and delicious.

Thin Mint Muffins
These muffins are based on my favorite chocolate muffins - from King Arthur Flour. Instead of chocolate chips, I chopped up a sleeve of Thin Mints and added a few Andes Mint Chips too.

Girl Scouts 2013My UCLA college roommate, Agnes has two beautiful daughters, Lucia & Julia. They are in the Girl Scouts and each year I put out the cookie order form at work. To be honest, I don't know why anyone orders anything but Thin Mints... especially those Samoas covered with coconut (yuck!)

Over the years, I've tried to incorporate Thin Mints into favorite baked goods. You know, baking with seasonal ingredients and all. This year, I ordered six boxes of Thin Mints for myself. I'm not sure how long they'll last though. There have been incidents that require Thin Mint assistance: a bad week, nothing in the fridge to eat, and actors leaving Downton Abbey which translates into sad, sad endings (total thin mint worthy).

So, what have you been up to lately? Obviously, I haven't been blogging too much... I've been watching some TV. What's on your DVR? I have:

The Following with Kevin Bacon on Fox. Holy smokes. This show is fantastic but scares the beeejesuzzz out of me. I can't watch it on Monday night because then I can't sleep. I have to watch it on the weekend during the day. With the doors locked.

The Good Wife. CBS. Still a good show. Liked Julianna Margulies since her Nurse Carol Hathaway days on ER.

Elementary. CBS. Took some episodes to warm up to this one, but it's a good one to keep me in the Holmes world until the BBC releases more Sherlock.

Southland. TNT. Great cop show...and I like seeing Los Angeles landmarks throughout. :)

House of Cards. Netflix streaming. Damn, this is sooo good. Kevin Spacey is amazing.

Comedies:  The Mindy Project, New Girl, The New Normal

Waiting for more episodes from: White Collar (season just ended), Mad Men (coming back in April), Downton Abbey (if they don't kill off everyone...)

I don't have premium channels on cable so I have to wait and buy Amazon instant videos of Homeland (don't tell me what happens in Season 2 please! :)

Recipe:
Thin Mint Muffins

Adapted from King Arthur Flour's website's: Chocolate Breakfast Muffins with added Thin Mint cookies and Andes Mint Chips.

2/3 cup (2 ounces) Dutch-process cocoa
1 3/4 cups (7 1/4 ounces) King Arthur Unbleached All-Purpose Flour
1 1/4 cups (9 3/8 ounces) light brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 sleeve of Girl Scout Thin Mint cookies, chopped (in 2013, that was about 15-16 cookies and equaled about 1 1/4 cups)
1/2 cup Andes Mint Chips
2 eggs
1 cup (8 ounces) milk (I used whole milk)
2 teaspoons vanilla
2 teaspoons vinegar
1/2 cup (4 ounces, 1 stick) butter, melted

Prep: Preheat oven to 400°F. Prep muffin tin (I sprayed mine with Pam with Flour spray).
1. In a large mixing bowl, whisk together the cocoa, flour, sugar, baking powder, baking soda, salt, chopped Thin Mint cookies and Andes mint chips.
2. In a large measuring cup or medium mixing bowl, whisk together the eggs, milk, vanilla and vinegar.
3. Add the wet ingredients, along with the melted butter, to the dry ingredients, stirring to blend, just until combined. Do not mix.
4. Scoop the batter into the prepared muffin tin. King Arthur makes 12 muffins with big tops, but I made them smaller and made 16-18 muffins.
5. Bake the muffins for 18-25 minutes (depending on size), or until a cake tester inserted in the center of a muffin comes out clean. Remove the muffins from the oven, and after 5 minutes remove them from the pan, to cool on a rack.

My friend's daughters were selling Girl Scout cookies. My favorite time of the year! I helped them and left the order form out at work (along with this cute photo of the girls!) and sold 81 boxes of cookies at a couple work places! Um, I may or may not have purchased a bunch of said cookies. You know, supporting youth. I'm all for it.

Thin Mint Scones
I made the scones in the evening and cut them into 16 small squares. I put them on this 1/4 sheet pan and wrapped it tightly with plastic wrap. Then I froze them overnight. In the morning, you can just pop them in the oven (spread out on two 1/2 sheet pans) for a little longer than the recipe's recommended baking time. In my rush, I forgot to put the egg wash and sanding sugar on the scones before baking so your finished scone may look a bit different.

I chopped up less than one sleeve of Thin Mints (about 12-14 cookies). It was a little less than 1 cup...enough to give a Thin Mint taste with a few cookies remaining to eat while they bake! :)

6. Cut into shapes.
7. Place on parchment or Silpat covered baking sheet. Brush with egg wash. Sprinkle with sugar.
8. Bake for 14-16 minutes (depending on your oven) until golden brown and delicious. I cut my smaller and got 16 scones.

NPR has a collection of "Driveway Moments" - those stories so compelling you find yourself sitting in the car to catch the end of the piece. I have often found myself in that situation, along with "Cry on the Freeway Moment" (damn you, Storycorp).

Today, I had a NPR Baking Moment.

All Things Considered had a story about Girl Scout cookies and how you can bake & cook with them. Samoas Fried Shrimp, anyone? See here for the story and taste test. By the way, I have new respect for host Michele Norris because she too hates coconut :)

The Girl Scout website has Thin Mint Brownies, but they use a boxed brownie mix. I made the brownies from scratch and added Girl Scout Thin Mints.

I think it is appropriate to make Brownies with Thin Mints because that was my maximum level of participation. I never made it Girl Scouts...so I'll be a Brownie forever. ;)

I took Everyday Food's (Martha Stewart empire) Chocolate Chip Brownies recipe, deleted the chocolate chips, and added a sleeve of Thin Mints. It is triple chocolate: melted bittersweet chocolate, cocoa powder and the Thin Mints!

Recipe:
Girl Scout Thin Mint Brownies
Adapted from Everyday Food's Chocolate Chip Brownies recipe

Printable recipe here

1 cup all-purpose flour, spooned and leveled
1/4 cup unsweetened cocoa powder (I used Scharffenberger Natural cocoa powder)
1/2 teaspoon baking powder
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter, cut into pieces
8 ounces semisweet or bittersweet chocolate, chopped (I used bittersweet chocolate)
1 1/4 cups sugar
3 large eggs
1 sleeve Girl Scout Thin Mint cookies, chopped. (Okay, Thin Mints keep shrinking to keep the price at $4 a box. So, it is 3 1/2 ounces of Thin Mints or 16 cookies)

1. Preheat oven to 350 degrees. Line 9 x 9 square pan with parchment paper and butter or spray with Pam with flour (that's my method). In a small bowl, whisk flour, cocoa, baking powder, and salt; set aside.

2. Place butter and semi-sweet or bittersweet chocolate in a large heat-proof bowl set over (not in) a saucepan of gently simmering water. Heat, stirring occasionally, until smooth. Remove bowl from heat. Add sugar; mix to combine. Add eggs one at a time, and mix to combine. Add flour mixture; mix just until moistened (do not overmix). Fold in chopped Girl Scout Thin Mints. Transfer batter to prepared pan; smooth top.

3. Bake until a toothpick inserted in center comes out with a few moist crumbs attached, 40-50 minutes. (Be sure to check them early. The recipe says "50-60 minutes" but I checked mine at 50 minutes and they were way done). Cool in pan for 30 minutes. Using paper overhang, lift brownies out of pan; transfer to a rack to cool completely (still on paper). On a cutting board, using a dampened serrated knife, cut into squares.

It's Pi Day! (3/14 = 3.14)

To celebrate, the baking group You Want Pie with That? is posting their monthly pie selection today. This month's theme, selected by Elizabeth of Cake or Death, is Herbs and Spices.

I'm sure my other bakers are pulling out the mortar and pestle to grind cardamon pods, spent the month growing rosemary on their windowsill, or went to their Indian spice store.

Um, my herb is totally exotic.

It's pretty rare...only found in certain areas.
Like the delicate saffron, it is harvested by hand.
It's as addicting as the stuff they make from poppy seeds in Afghanistan.
The selling season is short and only sold by certain designated individuals.

My herb is the Girl Scout Thin Mint!
(Okay, it's a stretch, but I figure Pi day would appreciate the pun)

I took food processed about 1 1/2 sleeves of Thin Mints to make 1 1/2 cups of crumbs. (I didn't have enough so next time I would go for 2 cups of crumbs). Added 4 T (1/2 stick) of melted butter. Pressed into tart shell and baked 10 minutes at 350.

I blended an 8 ounce container of mascarone cream, 1/4 cup sugar, 1/3 c heavy cream, and 1 t vanilla for the filling.

The Cherry Blossoms trees are starting to bloom (sakura season).
The wildflowers are blossoming with amazing patches of colors.
And them Brownies and Girl Scouts are out selling crack.

Yes, it's almost Spring.

Besides having "jet lag" from the one hour time change, it is Girl Scout Cookie Season. So when a little girl dressed in brown or green tilts her head (very important aspect of the sales pitch) and says in a sweet voice, "Would you like to buy Girl Scout cookies?" you just automatically reach in your wallet and pull out a wad.

I made Martha Stewart's One-Bowl Chocolate Cupcake as a base with one sleeve of crushed Thin Mints added (in 2009, the sleeves are shrinking so that is 16 Thin Mint cookies - I believe they had 18 cookies previously).

Frosting is one 8 oz. block of cream cheese and 1 cup of powdered sugar and some vanilla.

I broke some Thin Mints to garnish the cupcakes...of course, some of the pieces weren't suitable and I had to eat them quickly!

I made 24 Thin Mint Chocolate Cupcakes (the frosting was light - if you want to twirl it wider or higher, use 2 blocks of cream cheese and 2 cups of powdered sugar).

I'll tell you the truth. I never made it to Girl Scouts! I was a Brownie but then our adult leader moved away so I never went higher. Well, I hope this cupcake is Girl Scout Badge Worthy. :)
