For this week's Tuesdays with Dorie selection, Tania of Love Big, Bake Often chose the Devilish Shortcakes on page 425 of Dorie's book, Baking: From My Home to Yours. 

You know I'm all about the mini. They are cute. They are small. And they are all about portion control. Unless you eat 5 of them. Well, let's just focus on the positive.

I scooped these out with a cookie scoop and baked them from 10 minutes. A bit of sanding sugar topped the biscuit before baking...because life is just better with sanding sugar.

During this time of year, our selection of berries was pretty sad. I had to work last Saturday and couldn't visit the farmers market so I knew I needed a different fruit. What else goes with chocolate? Of course, bananas!

Today is Tuesday. Guess what NEXT Tuesday is?! Hellz yes! My 40th Birthday! You know I've been building up to this for the last six months or so...and I can't believe it is almost here! Whoo hoo. My friend and I are going to take a 3-day Mexican cruise for our birthdays (Helen's birthday is Dec 4th and mine is Dec 7th). (Note to bad people: Our homes, cars, identity & credit scores are all protected and under guard while we are gone!)

It combines all the goodness of so many yummy things into one perfect little package. Muffin. Donut. Pumpkin. Score!

Pumpkin Doughnut Muffins
The Everyday Food recipe makes regular sized muffins, but I think the mini muffins are perfect. Who wants the guilt of eating a whole big muffin when you can innocently sneak 3 mini muffins instead! :) I wore disposable gloves and my left hand held the muffin for the melted butter basting and my right hand mixed the muffins in the cinnamon sugar mixture.

Adapted from: Pumpkin Doughnut Muffins from Everyday Food (November 2010)

10 tablespoons (1 1/4 sticks) unsalted butter, room temperature
3 cups all-purpose flour (I used 14 ounces)
2 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon coarse salt
1 teaspoon pumpkin pie spice (original recipe uses nutmeg and allspice)
1/3 cup buttermilk
1 1/4 cups pure pumpkin puree (This is almost the entire 15-ounce can of pumpkin)
3/4 cup light brown sugar
2 large eggs

Cinnamon Sugar Coating
3/4 cup granulated sugar
2 1/2 teaspoons ground cinnamon
1/4 cup (1/2 stick) unsalted butter, melted

1. Preheat oven to 350 degrees.
2. I used mini muffin pans. Spray the pan with Pam with Flour, or butter and flour the cups.
3. In a bowl, whisk together: flour, baking powder, baking soda, salt, and spices.
4. In a small bowl or measure cup, whisk together buttermilk and pumpkin puree.
5. With the paddle attachment, cream butter and brown sugar until light and fluffy.
6. Beat in eggs, one at a time.
7. With mixer on low, add flour mixture in three additions, alternating with two additions pumpkin mixture. Do not overmix.
8. Spoon into batter. I baked the mini muffins for 10-12 minutes, until a toothpick comes out clean.
9. While the muffins are baking, combine granulated sugar and cinnamon in a large bowl.
10. After the muffins sit for 5 minutes, remove muffins and brush the entire muffin with the melted butter. Toss and coat in the sugar mixture. Eat warm or let cool completely.
11. Hint: I wore disposable gloves and my left hand held the muffin for the melted butter basting and my right hand mixed the muffins in the cinnamon sugar mixture.
12. I got 46 mini-muffins from this recipe. The original recipe yields 12 regular size muffins. I think the mini-muffins are the perfect donut holes.

The Food Librarian finishes the Turkey Trot 5K...and eats pie all day

Torrance Turkey Trot 2010
Just a quick post to, well, for lack of a better word, brag! I finished a 5K!

Back in July, I posted about my successful completion of the Couch to 5K program using the GetRunning app. Well, I fell off the wagon a bit (injury, Bundt month, my friend's wedding, the end of daylight savings time and other excuses) but decided I had to run in a 5K before I turn 40 in a few days.

So my friend and coach Dave and I ran the Torrance Turkey Trot on Thanksgiving Day. It's a fun run. You get a nice sweatshirt as well as a license to eat 3 pieces of pie later that day (which I totally did). I thought we would have to walk much of it, but I plugged along, and finished in 35:57!

And my friend Dave? Well, he just turned 40 on Saturday and he has completed three marathons this year...with his fourth marathon in 13 months this weekend! Wow! Go Dave!

It was freezing cold (well, by Los Angeles the 40's!) when the race started so that's my jacket tied around me. My friend Jessica walked the 5K, and we decided this will definitely be an annual tradition! Next up, the Universal Studios back lot 5K (yes, you get to run by the sets) and the LA Marathon 5K held the day before the marathon at Dodger's Stadium. 5K or perhaps a 10K is as far as I want to go. I need time to bake, people! No time to train for anything longer! :) - mary the food librarian

National Bundt Day 2010 - Round Up!

I Like Big Bundts 
November 15, 2010 was National Bundt Day! Oh my goodness! So many people baked Bundts to celebrate. I'm overwhelmed by the Bundt love.

Last year, I had an impressive 41 Bundts in the Round Up. This year, an amazing 86 (yes, eighty-six!!) Bundts are in the Round Up!

I loved reading each post and email. Some used your grandmother's or mother's bundt pans. Some used this holiday to run out and buy a new one. Some had a Bundt party. Awesomeness.

However, your descriptions about my obsession with the world's perfect cake vehicle, the Bundt and my crazy adventure again cracked me up!
