Brownie Crinkle Cookies from The Boy Who Bakes recipe

Do you have one hour? Then you have time to make these cookies! Really, they are super easy and fast. I can wake up super duper early and make them before work (and I leave home at 6 am). Sometimes, I don't have time to let them cool so I just lug the half-sheet pan into work. My co-workers don't mind. And I'm sure your friends won't mind too.

This recipe is from The Boy Who Bakes. I love Edd Kimber, cookbook author and winner of the BBC2's Great British Bake Off. He has engaging videos and fun content on Instagram. Earlier this year, he brought us heaven...in the form of a brownie cookie.

Baking these cookies is so much easier than baking brownies - you don't have to wait until the brownies are cool, cut them into squares, and place into cupcake liners. This is a brownie. In the shape of a drop cookie. Oh, did I mention there is sea salt? Yes there is.

I'm excited to come back to blogging with this recipe. I've been making these cookies All. The. Time. I would think colleagues would get sick of them...but apparently they have no trouble finishing them off. Let's go. - mary

The Boy Who Bakes emphasizes this and I concur. You need GOOD ingredients for this to work. It has two types of chocolate: Dark chocolate and Dutch Cocoa. I use the Trader Joe's Belgium Dark Chocolate and Valhrona Dutch Cocoa (purchased at the new Surfas location in Los Angeles - so excited they are back!!)

The other thing that's key in this recipe is timing. You should mise en place your ingredients, preheat your oven, and have two parchment lined trays at the ready.

When the chocolate is melted, start the stand mixer containing the sugars and eggs. Beat for exactly 5 minutes.

I use Jacobsen Salt Co. - Hand Harvested Pure Flake Sea Salt. It's really delicious salt. I even carry some around with me in a little tin - from Amazon (affiliate links)


Recipe: Brownie Crinkle Cookies
(adapted from The Boy Who Bakes)
200 g dark chocolate (around 65-70% cocoa solids), chopped - I use Trader Joe's Dark Chocolate pound bar
125 g (1 stick) unsalted butter, diced
150 g sugar (original recipe calls for caster sugar, but I use granulated sugar)
100 g light brown sugar
2 large eggs
130 g all-purpose flour
3 Tablespoon (about 18-20 grams) Dutch-processed cocoa powder (not natural) - I use Valhorna cocoa powder
1 tsp baking powder
1/4 tsp salt - I use kosher salt

Flaked sea salt for sprinkling - I used Jacobsen's

As the Boy Who Bakes stressed, timing is important. Be sure to have a preheated oven at 350 F ready to go, parchment lined sheet trays (I use 2 half-sheets), as well as all your ingredients scaled and ready.

1. Preheat oven to 350 degrees.
2a. Sift together dry ingredients (flour, cocoa, baking powder, and salt). Set aside.
2b. Using a double boiler, melt butter and chocolate, stirring occasionally. Remove from heat when melted.
3. As soon as the chocolate is melted, beat together the sugars (granulated and brown sugar) and eggs in a stand mixer with whisk attachment for 5 minutes (set a timer...you want 5 minutes).
4. Scrape down sides of mixture and add the melted chocolate & butter mixture. Beat for 30 seconds to 1 minute until combined.
5. Add the sifted dry ingredients all at once and mix just until combined. I usually stop early and finish folding with a spatula until blended. But hurry...you gotta get this into the oven.
6. Scoop with disher (cookie or ice cream scoop) so they are uniform in size. (Note: Boy Who Bakes makes them really big. He fits 6 on a tray and I get at least 12.) They do spread so don't crowd them on the tray.
7. Sprinkle some flaked sea salt on top of each cookie. (When I started I didn't put enough salt on each cookie, so don't be afraid).
8. Place in center of oven and bake for 12 minutes. They will develop a crinkled top and puff a bit. I bake with the tray in the center rack and only bake one tray at a time.
9. Remove from oven and let rest on the tray until they are cool. Because they are soft, don't move onto a cooling rack until they are cool.
10. Enjoy!

Chocolate + Espresso + Amazing Crown Bundt Pan = Simply Delicious!

You know that "Japanese Clutter" book (The Life-Changing Magic of Tidying Up: The Japanese Art of Decluttering and Organizing by Marie Kondo)? Well, she tells you to hold up every single item you own and ask, "Does this bring me joy?" If not, you toss it without regret because you only want to surround yourself with things that make you happy.

Therefore, I just want to tell you... I want to surround myself with this new Nordic Ware Bundt pan (and its cousins, all my other Bundt pans). This Crown Bundt is the diva of my Bundt world - totally cool and layered in gold.

(As an aside, I found the book interesting although sometimes crazy, but she has revolutionized my drawers so I now "stand up my folded clothes" and it saves so much space. Really.)

I'm excited to show you the new 70th Anniversary Nordic Ware Crown Bundt pan. Isn't it pretty? It's amazing that family-owned Nordic Ware has been making bakeware for 70 years! Most of their pans are made in America too.

Here's a side view of the cake. This was a big hit at work. It's a perfect Bundt for a meeting or brunch - goes nicely with coffee or tea.

For this recipe, I was inspired by my favorite Chocolate Cinnamon Bundt, but switched up the flavors. I added some instant espresso powder to highlight the chocolate flavor, and used butter and coconut oil. It's super easy to make - you just need to melt some ingredients and mix. No KitchenAid mixer is needed.

Recipe: Chocolate Espresso Bundt Cake

1 stick (1/2 cup) unsalted butter
1/2 cup coconut oil (it was solid when I measured it)
5 T cocoa powder (I use 30 grams of Hershey's cocoa)
1 cup water (it goes faster if you use hot water)

2 cups (280 grams) all-purpose flour
1 3/4 cups (350 grams) granulated sugar
1 teaspoon kosher salt
1 1/2 teaspoons baking soda

2 large eggs, lightly beaten
1 teaspoon pure vanilla extract

1/2 cup sour cream

Instructions:
Prepare 10-cup or 12-cup Bundt pan (I prefer to use a baking spray (with flour) but you can also butter and flour the pan). Preheat oven to 350 degrees.

1. In a large bowl, whisk together: flour, sugar, baking soda, and salt.
2. Place water, coconut oil, butter, instant espresso powder and cocoa in a small pot and heat until melted, whisking to combine together. Remove from heat.
3. Add the chocolate mixture to the flour mixture, and whisk by hand until combined.
4. In a small bowl, lightly beat together the eggs and vanilla. Add to the batter and combine.
5. Add the sour cream and combine with the whisk.
6. Pour batter into prepared Bundt pan. It will be a runny batter.
7. Bake at 350 degrees for 40-50 minutes (depending on your oven and pan), until a wooden skewer comes out clean.
8. Remove from oven and let sit on a wire rack for 15 minutes. Invert onto wire rack and let cool completely.
9. Eat plain or dust with powdered sugar and enjoy.

Whew! I made it by 2 hours! I'm back with Tuesdays with Dorie. Oh, I lost a couple months due to the holidays and a full week of the flu...but I couldn't miss today! It's a bar with Rice Krispies on top!

These were super simple to make. A brown sugar shortbread is baked until golden brown. Then, you spread chopped chocolate (I used Trader Joe's Dark Chocolate block) on top and let it melt a bit. A quick spread of the chocolate creates a space for your cereal!

You can put a caramelized cereal topping too. Look at the book for this yummy option.

Crispy Topped Brown Sugar Bars - Tuesdays with Dorie

Tuesdays with Dorie doesn't publish the recipe. You should get Dorie's book: Baking Chez Moi: Recipes from My Paris Home to Your Home Anywhere (this recipe is on page 324)! I love all the recipes in the book and Dorie's kind words and encouragement. In this recipe, she says, "show it who's boss" referring the shortbread dough. Love it!

P.S. I love my 8 x 8 x 2 pan. It's by Magic Line/Parrish. The edges are perfectly square so you get sharp edges on brownies, cakes, etc. I have 8" and 9" square pans, as well as 9" x 13" rectangle pans too. And they are made in Los Angeles! (I've visited the factory store...here's a post about it)

I usually make the Jacque Torres New York Times Chocolate Chip Cookies but they take 2 days to prep (gotta let the batter rest in the refrig). I didn't have that time so I went looking for an alternate. These Chocolate Chip Cookies were on the New York Times Cooking website and are from WD-50 restaurant in NY.

These cookies have an interesting prep. It starts melted butter whipped together with sugars for 3 minutes (top two photos). It's pretty unusual to use the whisk attachment for cookies! Then you whip in eggs and let that go for 6 minutes (bottom two photos).

After adding the flour mixture (using bread and AP flour) and chocolate chips with a paddle attachment, the dough is very soft and wet. You need to refrigerate it until scoopable (I let mine rest overnight).

According to the recipe, the yield was supposed to be three dozen but I was three short of that.

These cookies are thin & flat with slightly crispy edges, but retain a soft middle. I would add more chocolate chips than the recipe to give it more chocolate flavor. I really enjoyed the taste of the "non-chocolate" cookie part - very nice!

Adapted from Malcolm Livingston II, WD-50, New York Times Cooking website

11 tablespoons/150 grams unsalted butter, melted
1/2 cup/100 grams packed dark brown sugar
1/2 cup/88 grams granulated sugar
1 egg plus 1 yolk
1 cup/150 grams bread flour
1/3 cup/50 grams all­-purpose flour
1 teaspoon/4 grams salt (I used kosher salt)
1/4 teaspoon baking soda
1/4 teaspoon baking powder
3/4 cup/125 grams chocolate chips (I used Nestle semi-sweet. Next time, I would use a full cup of chips)
(Note: There is no vanilla in this recipe)

1. In a standing mixer with the WHISK attachment, whip the butter, brown sugar and granulated sugar for 3 minutes.
2. Add the whole egg and one yolk to the mixture, and whip it for another 6 minutes. The batter will be light in color.
3. Sift together the flours, salt, baking soda and baking powder.
4. Using a PADDLE attachment, slowly add the dry ingredients until almost fulling incorporated. Then add the chocolate chips and mix until the batter is completely mixed together. The dough will be soft. 
5. Chill dough until you can scoop it. (I rested mine overnight). The original recipe says you can also put the dough on parchment paper, roll up, twist ends and chill for 1 hour and then slice the cookie pieces. 
6. After dough has chilled, preheat oven to 375 degrees. 
7. Scoop (or cut if you did the log method) a dozen cookies on a parchment lined baking sheet. You should get close to 3 dozen cookies. Bake for 12-15 minutes, until the edges are golden brown but the center is still soft. 
8. After baking, let sit on baking sheet for a couple minutes and then remove with a spatula to a cooling rack. Enjoy!

At work, we hit a milestone in a crazy big project so we had to celebrate. We had an ice cream social for the team and one of the ice cream toppings included mini M&Ms. By the way, I was trying to figure out how to transport the sprinkles and toppings from home to work and I used my cupcake tin! Worked perfectly.
This morning as I was pulling out all my sprinkles, I thought...what do I have to hold all these? #cupcaketrayrocks #icecreamsocial

Since we had a lot of mini M&Ms leftover, I made these chocolate cookies - the recipe was easy to find...it's on the back of the package!

Mini M&M Chocolate Cookies
Adapted from the recipe on the back of the 12 ounce package

1 cup (2 sticks) butter, softened
1 cup (200 grams) sugar
3/4 cup (150 grams) light brown sugar
2 eggs
1 teaspoon vanilla extract
2 1/4 (315 grams) all-purpose flour
1/3 cup cocoa powder (I used 28 grams of Callebaut dutch processed cocoa powder)
1 teaspoon baking soda
pinch of kosher salt
1 cup M&M minis (The recipe calls for 1 3/4 cup M&Ms but since I was using leftovers, I only had a little over 1 cup)

Note: You need to chill the dough for an hour or overnight.

1. Cream butter and sugars together in a mixer with paddle attachment.
2. Add eggs and vanilla and blend until combined.
3. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
4. With the mixer on low, slowly add the flour mixture and blend together just until combined.
5. Fold in the mini M&Ms.
6. Chill for an hour or overnight.
7. When ready to bake, preheat oven to 350 degrees.
8. Scoop out tablespoons of dough and place on cookie sheet. I like to top each cookie with a few M&Ms so I'm guaranteed some m&m on the top. If you use the full amount of M&Ms, you might not need to do this because you'll have enough M&Ms in the batter.
9. Bake 10-13 minutes. (Their instructions say 7-9 minutes for chewy cookies and 10-12 minutes for crispy, but mine were totally not done at 7 minutes)

I was going through my chocolate stash and found some white chocolate chips that I forgot about. Thus, chocolate scones with white chocolate chips!

I'm such a fan of scones. They are easy to make in the morning and are perfect for a morning meeting. My department has a standing weekly morning meeting, and I bought these to share.

After the meeting, I placed the "leftover" scones on a table for other staff to eat. I ran into a colleague later that morning holding one of the scones. As she walked by, she said, "I'll eat anything you bake. You can make mud pies and I'll eat 'em." Hee hee.

The dough comes together very quickly. Remember - don't overmix scones. I like to make smaller scones (more to share) so I made two circles and cut each into 8 pieces. Brush some cream on top and finish with a sprinkle of sanding sugar. (I totally use sanding sugar on everything...well, except a chicken dinner, but pretty much all baked goods!)

Chocolate Scones with White Chocolate Chips

Chocolate Scones with White Chocolate Chips
2/3 cup of heavy cream (plus a little more to brush on the scones)
1 large egg
1 teaspoon vanilla extract
1 3/4 cups (245 grams) all purpose flour
1/4 cup (25 grams) Dutch-processed unsweetened cocoa powder (I use Callebaut)
1/2 cup (100 grams) sugar
1 Tablespoon baking powder
1/4 teaspoon kosher salt
6 Tablespoons (75% of one stick of butter) cold unsalted butter, cut into small pieces
1/2 cup white chocolate chips
Sanding sugar (optional)

1. Preheat oven to 375 degrees F.
2. Mix together in the measuring cup or a small bowl the cream, egg and vanilla.
3. In a large bowl, whisk or sift together the flour, cocoa powder, sugar, baking powder and salt.
4. Cut the butter into the flour mixture with a pastry blender, two knives or your fingers until the butter is pea-size.
5. Add the white chocolate chips to the mix and stir to blend.
6. Pour the cream mixture over the batter and mix until just blended together. Don't overmix and it's okay if you don't get it all incorporated because you'll knead it a bit in the next step.
7. Place the dough on a floured surface and knead to pull everything together but try to handle the dough as little as possible.
8. For mini scones: I split the dough in half and made two circles and cut each into 8 wedges. If you want larger scones, you can press it into one circle and cut into 8 wedges.
9. Place the scones on a baking sheet (I use parchment paper for easy clean up) and brush the top with a little cream or milk. Sprinkle sanding sugar on top.
10. Bake for 17-20 minutes (depending on the size of the scones and your oven) until they are firm around the edges.
11. Cool on wire rack and enjoy!

I can't find my digital scale. Eeck.

Due to some home improvements, things were moved around and crammed in other areas of the house and the garage. And I don't know where the digital scale went! Eeck. I use it all the time and feel like my arm is cut off when baking without it. Oh, and I can't find my camera too. It's kinda a disaster in the making. I'm lucky to have gotten these muffins out the door. I'll keep you posted on the lost and found that is the house.

These are Nigella Lawson's Chocolate Chocolate Chip Muffins. They have some cocoa powder and chocolate chips. I switched regular chocolate chips for mini chips because mini chips are cuter.

I really liked this recipe. Super easy to make and the texture was very good. I made them two days in a row and will definitely make them again in the future!

I slightly adapted Nigella's recipe from the Food Network

Chocolate Chocolate Chip Muffins
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons good quality cocoa powder (I used Callebaut dutch chocolate)
3/4 cup superfine sugar (one time, I used granulated sugar and it turned out fine)
3/4 cup semisweet chocolate chips, plus 1/4 cup for sprinkling on top (1 cup total chips - I used mini semi-sweet chocolate chips)
1 cup milk (I used whole milk)
1/3 cup plus 2 teaspoons vegetable oil
1 egg
1 teaspoon vanilla extract

1. Line a muffin tin with liners.
2. Preheat the oven to 400 degrees F.
3. In a large bowl, combine flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips.
4. In a measuring cup, mix together the oil, milk, egg and vanilla together.
5. Pour the liquids over the dry ingredients and mix together. Don't overmix - it's fine if it's lumpy.
6. Scoop into muffin tin.
7. Sprinkle the 1/4 cup of chocolate chips on top.
8. Bake for 20 minutes until a toothpick comes out clean.
Makes 12 muffins.

On Saturday morning, I turned on the DVR and found a new episode of Ree Drummond in The Pioneer Woman Food Network show. It was all about football camp with her making 120 sandwiches and these "Spreads" cookies for the football camp boys.

Spreads are the often requested treat of Ree's older brother and it's basically a cookie dough topped with melted chocolate chips. In her 2009 post on her blog, she doesn't top it with extra stuff, but on the show, she went crazy and filled it with toppings.

On this spread, I topped it with two types of candy sprinkles.

This was topped with Heath English Toffee Bits. I just love these. They go great in scones too (see this recipe)

The dough is very close to a cookie dough and you simply spread it on a baking sheet. After it bakes for 15-20 minutes, you take it out and place chocolate chips on top. Then it goes back in the oven for 1 more minute (just long enough to soften the chips) and then you spread them out with your offset spatula. Seriously easy peasy.

After they chill out, you can cut the spreads into any size pieces. I found it helpful to refrigerate them for 15 minutes before cutting.

I made one batch and split it between two quarter-sheet pans. You can make one big spread, or smaller individual ones too. On the show, she topped one with this crazy s'mores gone wild: crushed graham crackers, mini marshmallows, M&Ms and caramel sauce.

Cidney the Girl Dog was hanging out on her Costco doggie bed (the cover was in the wash) while I made the Spreads. I'm not sure she liked me interrupting her rest. :)

See her original recipe (2009) and from the Food Network

1 cup (200 grams) light brown sugar
1 cup (2 sticks) butter, room temperature
1 large egg
2 cups (280 grams) all-purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon baking soda (I added this, not in the original recipe)
1 teaspoon vanilla
6 - 8 ounces semi-sweet chocolate chips (I used 8 ounces, but I think 6 ounces would be fine)

1. Preheat oven to 350 degrees.
2. Place parchment paper on a half-sheet or quarter-sheet pan. The Pioneer Woman does not use parchment, but I find the clean up easier with parchment.
3a. In a small bowl, whisk together the flour, salt and baking soda.
3b. With an electric mixer and paddle attachment, cream together the butter and brown sugar until light and fluffy.
4. Add the egg and blend together, scraping down the sides of the bowl.
5. Add the vanilla and blend.
6. With the mixer on low, slowly add the flour and salt and blend until just combined.
7. With an offset spatula, spread dough on the baking pan to a thickness of 1/4 to 1/2 inch. Don't spread it the edges of the pan.
8. Bake for 15-20 minutes, until golden brown on the edges.
9. Pull out of the oven (leave the oven on) and sprinkle the chocolate chips on the cookie.
10. Return to the oven and for 1 minute. Remove and spread the chips over the top with the offset spatula.
11. Spread your selected toppings on top.

Happy National Bundt Day! November 15th is one of my favorite days of the year! :) I don't know who made up this silly food holiday, but I'm glad they did.

I hope you make a Bundt to celebrate the inverted, curvy cake! You don't need a mixer and it all comes together in a flash. If you want to celebrate National Bundt Day today and can't decide from the 100 plus recipes I've made in the past... then pick this Bundt. You probably have many of the ingredients in your house. And if you don't have buttermilk, just make it with some milk and vinegar.

Although it was the "light" edition with only 15 days of bundts this year, I'm going to take a breather and rest for a bit... Happy Bundt Day to you and yours! - mary the food librarian

Chocolate Cinnamon Bundt
1 cup water
1/2 cup vegetable oil
1 stick (1/2 cup) butter
1/4 c plus 1 T (or 5 T) cocoa (I have used both Dutch processed and natural cocoa with fine results). I used 30 grams of Hershey's Cocoa.

2 cups (280 grams) all-purpose flour
2 cups (400 grams) sugar
1/2 t salt
1 1/2 t cinnamon

1/2 c buttermilk
1 t baking soda

2 eggs
1 t vanilla

Instructions:
Prepare 10-cup or 12-cup Bundt pan (I prefer to use Pam with Flour or Bakers Joy but you can also butter and flour the pan). Preheat oven to 375 degree.

1. In a large bowl, whisk together: flour, sugar, salt, cinnamon
2. Bring to a boil in a pot: Water, oil, butter and cocoa. Once it reaches a boil, remove from heat.
3. Add the chocolate mixture to the flour and whisk by hand until combined.
4. Add the buttermilk and baking soda and mix.
5. In a small bowl, combine the eggs and vanilla. Add to the batter and combine.
6. Pour batter into prepared Bundt pan.
7. Bake at 375 degrees for 30-35 minutes (depending on your oven and pan), until a wooden skewer comes out clean.
8. Remove from oven and let sit on a wire rack for 15 minutes. Invert onto wire rack and let cool completely.
9. Dust with powdered sugar and enjoy.
