Where has the time gone?! I'm back for another marathon of Bundts! Because I cannot lie, I Like Big Bundts!

For those who are new to the blog or just visiting, I love the Bundt cake. I like cake but don't care for frosting (too sweet for me). The bundt? It's perfection with just a light dusting of powdered sugar or a light glaze. A couple years ago, I thought I would celebrate National Bundt Day on November 15th by making 30 different bundt cakes prior to an awesome holiday. I mentioned this to my totally sharp friend, JustJenn and she said, "I Like Big Bundts!"

I hope this year is fun for you, and I hope you mark November 15th on your calendar! Last year, if you made a Bundt for National Bundt Day, I mailed out a JustJenn designed button proclaming that you too like Big Bundts. This year, I have something special planned for those who bake along! (submission info coming next week)

Dust off your Bundt pan and let's get going! And hey, a TUBE pan isn't a Bundt pan. I feel Bundts need to be inverted and have some sort of sexy curves! Tube pans are just so boring compared to the Bundt! Here is a look at my collection of Bundt pans!

Recipe adapted from the Los Angeles Times Food Section Culinary SOS. Culinary SOS is great - readers ask (well, most of the time they beg) for a recipe from a local restaurant or bakery. Let's get the party started with this rich bundt from the Baked: New Frontiers in Baking cookbook. I've borrowed this book from the library (dude, I work in a library) several times and finally purchased it.

I love marble bundts. They look plain jane on the outside, but they have a surprise center of fun.

This is a mighty cake. The batter fills your bowl. You better have a 12-cup capacity Bundt for this baby. I'm using a Nordic Ware Bundt pan. I'll show off all my Bundt pans in the next 30 days. I don't have that many...just a big plastic container full! :)

Ah, the inside of a marble bundt rocks. This cake is rich and poundcakey. It has two cups of sour cream!

Marble Bundt Cake
Adapted from: “Baked” by Matt Lewis and Renato Poliafito - You should really buy this book. It's yummy.

Chocolate Swirl
6 ounces dark chocolate, coarsely chopped (I used Trader Joe's Bittersweet)
1 tsp unsweetened dark cocoa powder (I used Valrhona cocoa powder)

Sour Cream Cake
3 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 cup (2 sticks) unsalted butter, soft but cool
2 1/4 cups sugar
4 large eggs
16 ounces sour cream
1 1/2 tsp vanilla extract

Make the Chocolate Swirl:
In the top of a double broiler over simmering water, melt the chocolate. When the chocolate is completely smooth, add the cocoa powder and whisk until thoroughly incorporated. Remove the bowl from the heat and set aside.

Make the Sour Cream Cake:
Preheat the oven to 350℉. Prep 10-inch bundt pan (I spray mine with "Pam with Flour" spray...man, I go through a lot of that this month!).

Whisk the flour, baking powder, baking soda, and salt together into a medium bowl.

Using the paddle attachment, cream the butter until smooth and ribbonlike. Scrape down the bowl and add the sugar. Beat until the mixture is smooth and fluffy. Add the eggs, one at a time, beating well after each addition. Scrape down the bowl and mix for 30 seconds.

Add the sour cream and vanilla and beat just until incorporated. Add the dry ingredients in three additions, scraping down the bowl before each addition and beating only until each addition is just incorporated. Do not overmix. You will have a lot of batter.

Pour one third of the cake batter into the chocolate swirl mixture. Use a spatula to combine the chocolate mixture and the batter to make a smooth chocolate batter.

Spread half of the remaining plain cake batter in the prepared pan use an ice cream scoop to dollop the chocolate cake batter directly on top of the plain cake batter. The dollops will touch and mostly cover the plain batter, but some plain batter will peek through. Use a butter knife to swirl the chocolate and plain batter together. Pour the remaining plain batter on top of the chocolate layer and smooth it out. Once again, use the knife to pull through the layers to create a swirl.

Bake in the center of the oven for about 1 hour, rotating the pan halfway through the baking time, or until a sharp knife inserted in the center of the cake comes out clean.

Remove from the oven and let the cake cool in the pan on a wire rack for 30 minutes. Invert from pan onto wire rack and let cool. Serve warm or at room temperature. The cake will keep for three days, tightly covered, at room temperature.

When I go to Disneyland (annual pass rocks!), I love to get a Pineapple Dole Whip from the Enchanted Tiki Room Juice Bar or a Frozen Banana. Banana and Chocolate are such good friends.

Here is a Banana Chocolate Marble Bundt that combines the goodness of banana with the yummy of chocolate!

A simple dusting of powdered sugar is all this rich, moist Bundt needs!

I reduced the sugar by 1/4 cup. A layer of batter is placed on the bottom and then a layer of batter with cocoa (I used natural cocoa) is added. After being topped with the remaining batter, I swirled the two layers with a knife.

Nutella Bundt - I Like Big Bundts
I saw Michael Jackson's This Is It documentary on Friday and it was really good. The concert would have been awesome. The documentary is very well done, and it breaks your heart to know that the crew and dancers lost their dream too with Michael's passing. They all worked really hard to create an amazing show. My friend, who I literally dragged to the movie, was very impressed too. I highly recommend seeing it in a movie theater because it needs to be, like Michael himself, larger than life. Hurry, it's only in theaters for a couple weeks.

Well, during the movie you catch Michael saying something like, This is why we have rehearsals.

On my project of posting 30 Bundts in 30 days, there ain't time for a dress rehearsal. Thus, my imperfect Nutella Bundt. :)

Nutella Bundt - I Like Big Bundts
If you Google "Nutella Bundt" you will find a recipe that uses yellow cake mix. Since I'm baking from scratch, here is how I adapted things:

1. Made Martha Stewart's Basic Yellow Cake batter. This makes enough for one 8-inch (one layer) cake and you can multiply it as needed.
2. In a small bowl, mix 1/3 cup Nutella with 1 large egg together to loosen the Nutella mixture. Take 1/3 of the yellow cake batter and mix it with the Nutella. This is the Nutella batter you'll swirl into the cake. (Remember, this is enough for a small Bundt...if you were going to use a regular 12-cup Bundt, I would use 3/4 - 1 c Nutella and 1 egg).

Because I was using a small Bundt (6-cup), I poured the yellow mix in the pan and scooped the Nutella mix on top of that. Then I took a knife and marbled the two batters together. However, next time, I would lay 1/2 the yellow in the pan, followed by dollops of Nutella batter (using 1/2 the Nutella batter), followed by the remaining yellow and Nutella batter. Finally, a quick swirl with a knife would marble the two layers.

I sprayed the non-stick small 6-cup Bundt pan with Pam with Flour, but I still lost the "skin" of the top half of the Bundt. On one hand, though, it does give you a look at the marbling! :)

Um, I see a guinea pig in this one. Yes, I see things in my Bundts. Oh dear.

I threw some melted chocolate on top (to cover up the missing layer of cake) and I would totally NOT do this again. It was just too sweet. I think a quick glaze of powdered sugar and milk or just a dusting of powdered sugar would work too.

I'm going to work on this one in the "off season" when I've recovered from the Bundt project! :) hee hee.
