Kanellängd ~ Swedish Bread with Cinnamon and Pearl Sugar

Kanellängd or Swedish Bread topped with Swedish Pearl Sugar is one of my favorite treats of the holiday season. My friend Susan makes loaves of this delicious bread, and I always try to remain a permanent friend so I'm on the bread list. Ha ha. We've always wanted to get together to bake this super pretty bread, and 2018 was finally the year!

This recipe is really special - Susan's mother-in-law brought her recipe from Sweden when she immigrated to America. Susan's husband Rick remembers making bread every holiday season - this was before the ubiquitous Kitchen Aid mixer with dough hook so he remembers lots of mixing and kneading. I found recipes online and some have cinnamon and cardamom. But Rick's mom didn't like cardamom so that got nixed. I always love seeing how a traditional recipe is adapted by each family or generation.

The recipe calls for a mix of Swedish and US measurements - isn't that a true immigrant recipe? Rick's mom had her own deciliter measuring cup (100 milliliters = 1 deciliter) that Susan & Rick continue to use to this day. Do you have inherited cooking tools that you treasure?

This dough is a sweet dough made with all-purpose flour, whole milk, butter, sugar, eggs, yeast, and a little salt.

Dough! Kneading a bit before setting it aside to rise!

After an hour, the dough was punched down, kneaded, and divided into 8 equal pieces (using a scale is very handy). Then each piece is rolled out into a rectangle. Brush liberally with softened butter.

Sprinkle with sugar and cinnamon.

Roll the long end as tight as you can.

Pinch seal as best you can. Place seam side down on the baking sheet.

Okay. Here's the fun part. Using kitchen shears, cut sections of the log. Cut as close to the bottom of the log as possible. Fold over the just cut section in the following pattern: Center, Right, Left or Center, Left, Right - just be consistent. It's a good idea to pinch the top of each leaf so it keeps a nice pointy top.

Here's another view of the log. Center, Right, Left, Center, Right, Left...until you are done. You will need to nudge the uncut log up on the tray as you proceed to make sure you don't severe the bottom as the log stretches (this will make more sense when you are doing it).

By the way, when you get to the end, cut off any extra dough. Plop all those edges onto some part of the tray. Be sure to egg wash and Swedish pearl sugar those scraps and bake them off. Then you get to eat those scraps when they come out of the oven and save the loaf for your friends.

Cover the shaped loaves with a kitchen cloth and let rest for another hour to rise.

After the second rise, preheat oven to 350 degrees F and get them ready to bake!

 Brush each loaf with an egg wash. Be sure to get all the nooks and crannies. (Oh, in the upper left corner you can see the scrape pile of deliciousness). We fit three loaves on a half-sheet tray.

Top each loaf with a generous amount of pearl sugar. (Try not to eat all the pearl sugar out of the bag like I tried to do...it's so tasty and fun). Bake for 15-20 minutes at 350 degrees (length depends on the size of your loaf). Our 8 loaves baked for 19 minutes.

Done! Yum! After 5 minutes, remove from tray and move onto cooling racks.


Kanellängd - Swedish Bread Recipe (via Rick's mom)

Bread dough:
5 dl (deciliter) whole milk = 2.11338 US cups
1 1/2 sticks butter (12 tablespoons)
2 dl sugar = .85 US cups
1 egg
1 tsp salt

2 packages active dry yeast
1 T granulated sugar
18-20 dl all-purpose flour = 7.6 to 8.45 US cups

Filling:
Softened butter (about a stick)
Sugar
Cinnamon

Topping:
Egg
Swedish pearl sugar (I purchased it at Surfas. Can be found on Amazon (affiliate link) or King Arthur)

Equipment needed:
Kitchen shears
Parchment paper
Baking sheets

Instructions:

Make the Bread Dough:
Heat milk, butter, sugar over low heat until butter is melted.

In a small bowl, lightly beat the egg. Temper the egg with a little of the milk mixture, then pour it into the milk mixture and mix well. Add salt. Set aside to cool a bit.

In another small bowl, combine yeast and 1 T of sugar. When the milk mixture is lukewarm, add 1/4 cup to bowl and whisk together. Set aside for yeast to start bubbling.

When the yeast is ready, start making the dough. In a stand mixer with the dough hook attachment, add 10 dl (about half the flour). Add the remaining milk mixture. Add the yeast mixture. Mix dough until combined and then add remaining flour, 1 dl at a time, until dough pulls away from the sides of bowl. Remove from bowl onto floured surface. Knead a few minutes then set aside in a bowl. Cover with clean kitchen towel and set in a warm area to rise for 1 hour.

After dough rises for an hour, punch down dough and knead about 50 times on a floured surface.

Divide dough to make loaves (we made 8 loaves so we used the scale to equally divide the dough.)

Shaping & Baking:
With a rolling pin, roll out dough into a rectangle on a floured surface. Spread softened button on the entire surface of the dough (we used about 1 T per loaf). Sprinkle sugar to cover the butter, then sprinkle cinnamon.

Roll the LONG side tightly and seal the edges by pinching the dough together. Place seam side down on a parchment lined baking sheet.

Using kitchen shears, cut the dough into 1/4" sections and shape (see photos above). Place cut sections in the pattern: Center, Left, Right, Center, Left, Right, and repeat.

Cover the loaves with a kitchen towel and place in warm area to rise another hour.

After an hour, preheat oven to 350 degrees F.

Brush loaves with a lightly beaten egg (no added water) and sprinkle with the delicious Swedish pearl sugar.

Bake at 350 degrees for 15-20 minutes. (Of course, it depends on how many loaves you make. When we made 8 loaves, they baked for 19 minutes.)

After 5 minutes, move loaves onto racks to cool. These are delicious warm from the oven. Can be kept at room temperature until you gift them to friends and family during the holiday season (or keep them for yourself to eat!) They are lovely warmed in the toaster over too. Enjoy!

Congratulations Jun & David! This beautiful couple were married last Saturday, November 6th in Los Angeles. I met Jun while at UCLA's Library School in 2003, and we hit it off immediately and have had a great time the last 7 years.

The wedding ceremony was held at the Koyasan Buddhist Temple in Downtown Los Angeles' Little Tokyo. It was a very touching ceremony conducted in both English and Japanese. The priest had asked Jun & David to write letters to each other, and he read them during the ceremony. They didn't know he would do that when they wrote the letters, so they were honest and funny. After dating for 12 years, everyone was so excited to witness the ceremony. Jun wore her mother's beautiful wedding kimono!

The reception was held at the beautiful Center for the Arts, Eagle Rock. It's a historic 1914 Carnegie Library (the former LAPL Eagle Rock branch). They have art classes on the bottom floor and rent out the top floor. I think the bar area was the information or circulation desk! How perfect is that?!

I'm one of those people who loves to receive and give handmade gifts. So my gift to Jun & David was the dessert bar at the reception. 

(Jun & David, don't read this part) But what was I thinking? I'm a freaking librarian with a small refrig and basic oven. I've only make food for my library, and this was a 125 person reception. Thus, I got 5 hours of sleep in two days. But it was so worth it! The wedding and reception was so much fun!

...and we end with The Salty. After going to a few cupcake eating events with JustJenn, I feel having something salty with your sweets is very important so I put together an assortment of my favorite salty snacks.

I tried to make a mini display cake for the Daruma dolls turned bride & groom figurines. Daruma dolls are sold with both eyes blank. You fill-in one eye in when you set a goal/wish, and fill-in the other when the goal is attained. During the reception, Jun & David filled in the second eye.

Oh, you poor mini cake. I made it at 4 am on the day of the wedding (yes, I was a bit behind schedule. And before all you kids who finished a week's worth of homework in one night tell me I could have frozen items prior to the wedding, that just didn't happen.) It got frosted by Helen (Cook's Illustrated Basic Buttercream) and we were off to set up at the reception hall.

When we arrived, Helen lifts up the cake carrier and notices that the cake completely shifted and is smashed against the side of the box. We call Alison, Helen's awesome daughter, and leave this voicemail: "Alison. Go to the grocery store. Buy a boatload of white canned frosting. Stat. Please. Thank you." Then, I carry in the sad cake carrier and I proceed to Drop. It. On. Its. Head. Yes, we dropped the darn thing twice! Luckily, the Daruma figurines were not on the cake. Finally, we shellac the cake with canned frosting, but you can see some of the bad bits coming through. Luckily, no one was planning on cutting or eating this cake. On their first anniversary, I'll bring over cream puffs and cupcakes to celebrate. No one wants to get near this twice bruised cake.

This was the only photo I took of the dessert bar! See the blur? This is real time action! As we set out the dessert bar, guests were coming up and starting to fill up their plates. I had no time to take photos so I am grateful to Jun's co-worker Linda for snapping photos! Alison and Helen are behind the bar getting ready to spend the next few hours refilling desserts. We refilled, refilled and refilled over 1000 items!

This season, I have 5 1/2 pregnant friends! (Sunshine was having twins so I counted her as 1 1/2). There should all have 5 boys and 1 girl. Turns out that four of them are librarians too! No, I'm not telling you what happens in the stacks... ;)

And finally...the delivery season has begun!

First up, Sunshine and her precious, beautiful baby boys!

Congratulations to Sunshine, Clay and big sister Beatrice on the arrival of Simon and Oliver. They just increased the population of Duluth, Minnesota!

No, that isn't a typo. Oliver is 7+ pounds and Simon is 5+ pounds. Sunshine had them in less than 3 hours, naturally, no drugs and went home with her boys three days later! Sunshine is an amazing mom, librarian and swimmer...but who knew she's great at delivery too!

Mini-Yogurt Cakes with Strawberries and Yoplait Vanilla Yogurt

Today's my last day visiting my friends Racheal and Lee in the DC area. Yesterday, I made a light dessert with some ingredients we had on hand.

Adapted from the Barefoot Contessa's Lemon Yogurt Cake
This is 1/4 of Ina's recipe, and it made 5 regular size cupcakes.

sift together (dry):
1/4 c + 2 T flour, 1/2 t baking powder, dash of salt

whisk together (wet):
1/4 c yogurt (I used French vanilla Yoplait yogurt), 1/4 c sugar, 1 egg, 1/2 t zest (I used orange because that is what we had on hand), 1/8 t vanilla

oil: 2 T oil (I used vegetable oil, but have also used olive oil)

1. Combine the wet and dry ingredients until smooth.
2. Fold in oil until combined.
3. Bake at 350 for 15-20 minutes, until toothpick comes out clean.

Ina's recipe has a lovely lemon syrup, but I didn't have any lemons. I split the cupcake and spread some strawberry jam in the center with diced strawberries. I filled and topped one of them with the remaining Yoplait vanilla yogurt.

The lemon sauce would have been great on this, but luckily the fresh California strawberries were nice and tasty.

Since Racheal's big blowout California baby shower was postponed because she is now on modified bed rest for early contractions, I made a small breakfast shower to present her with gifts from friend and former neighbor, Diane and me. Yes, that's the Cinnamon Chocolate Bundt cake I love so much! :)

And if you think Racheal and I just sat around vegging out and eating for a week, you are wrong. We had a book discussion group too! Well, sorta. We watched both BBC's "Colin Firth in his glory" Pride and Prejudice as well as Bridget Jones's Diary. Then we had a lively discussion comparing the two movies that are based on Jane Austen's classic. Deep, in-depth discussions of Mr. Darcy's gaze at Elizabeth while she played the pianoforte, and when Mark Darcy looks at Bridget during her blue soup dinner! And, we discussed the latest issue of People...since we both read it cover-to-cover. Such an academic vacation, no?

If the mom is this cute in these hooded towels, the baby boy is going to be adorable. Before the trip, I took my mom with me to Babies R Us and she was amazed there was a whole wall dedicated to pacifiers...times have changed from cloth diapers!

I'm in DC visiting my friends Racheal and Lee who used to live in Los Angeles. She is on modified bed rest for her first pregnancy, her husband is on a business trip, and we are hanging out having a slumber party with pizza deliveries, take-out, naps, and lots of cable TV and movies (you know, all for the welfare of the baby...)

For dinner, I made a roast chicken with potatoes and carrots. Seriously, there is nothing better than potatoes roasted in chicken drippings. Yummmmmmy! However, the only problem was that I put the 4 pound chicken on the roasting pan upside down. When I tried to be cool and carve said chicken on Racheal's yet-to-be-used-but-received-three-years-ago-at-their-wedding meat cutting board (with "meat juice" border), my knife just keeps hitting bones. I mumble to myself, "This chicken is like me. No breasts." Luckily, I finally turned it over and found the hooters.

I used granny smith, braeburn, and gala apples in this crisp. I pitted and halved a few fresh cherries. This photo was taken before I realized I forgot the cinnamon and nutmeg! Next, I mixed in the missing spices. The topping is a mixture of butter, oatmeal, butter, flour, other stuff, and butter. Get the recipe on the Food Network website.
