I saw these Pumpkin Bars on Kitchen Runway's blog and knew they would be a perfect into to autumn foods. This recipe is super easy - it's like a Texas Sheet Cake (one of my favorite treats to make) but with Pumpkin and Cream Cheese Frosting.

Pumpkin Sheet Cake with Cream Cheese Frosting
Baked in a half-sheet pan, it cooks quickly. You'll need to cool the cake before frosting (unlike the Texas Sheet Cake that has a warm frosting poured over a warm cake).

The resulting cake is soft and light. You can eat this for breakfast, lunch and dinner. And why wouldn't you do that? ;)

I love my offset spatula. It's a must-have in the kitchen. I have a bunch of them (bought a few at the restaurant supply place for the kid's cake decorating party), and use them all the time.

For today's meeting, it's "Go @Dodgers Pumpkin Cake w Cream Cheese Frosting"
Updated: I also made this in a 9 x 13 pan. You'll get a taller cake, and baking time is about 30 minutes.

Pumpkin Sheet Cake with Cream Cheese Frosting
Adapted from Kitchen Runway who adapted Paula Deen's recipe.
I reduced the amount of sugar and used a pumpkin pie spice blend instead of cinnamon and nutmeg.

Cake:
4 large eggs
1 1/2 cups (300 grams) sugar
1 cup (200 grams by weight) canola oil
15 ounces pumpkin puree (not pumpkin pie mix)
1 teaspoon vanilla

2 cups (280 grams) all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 Tablespoon pumpkin pie spice (I used Trader Joe's Pumpkin Pie Spice that has cinnamon, ginger, lemon peel, nutmeg, cloves and cardamon)
1 teaspoon salt

1. Preheat oven to 350 degrees F. Butter and flour or spray with Pam with Flour a half-sheet tray (18" x 13")
2. In a large bowl, whisk together the eggs, sugar, oil, pumpkin pie puree, and vanilla.
3. In a medium bowl, mix together the flour, baking powder & soda, spices and salt.
4. Slowly add the flour mixture into the pumpkin. Stir to combine until completely blended.
5. Pour into tray and spread evenly in pan.
6. Bake for 20 minutes until toothpick inserted into cake comes out clean.
7. Place on wire rack and let cool.

Frosting:
8 ounces cream cheese, room temperature
1/2 cup (1 stick) butter, room temperature
2 cups (6 ounces) sifted powdered sugar
1 teaspoon vanilla

1. Using a mixer with paddle attachment or an electric mixture, blend the cream cheese and butter together until smooth.
2. Gradually add the powdered sugar.
3. Add the vanilla. Blend until complete mixed.
4. Using an offset spatula, spread frosting over cooled cake.

Libraries are so rad. Ok, I'm a little biased...but I am like many and check out lots of cookbooks from the library (cookbooks are one of the most popular non-fiction circulated titles in public libraries). Recently, I picked up The Cupcake Diaries: Recipes and Memories from the Sisters of Georgetown Cupcake by Katherine Kallinis Berman and Sophie Kallinis LaMontagne.

I've been to Georgetown Cupcake in 2009, and the cupcakes were very pretty. My friend Rosie came over and we made the Lemon Blossom Cupcakes.

Rosie, who recently graduated from Johnson and Wales with Bachelors of Science in Baking and Pastry Arts and Foodservice Management (Yay Rosie!!), made a few gum paste flowers. We put a little candy pearl inside the flower. Doesn't it look wonderful on my Whitney Smith pottery?

We had some issues with the measurements though. The recipe says it makes 12 cupcakes. Since I needed more for a work thing, we doubled the recipe - thinking we'll get 24 cupcakes. However, we got 36 cupcakes plus a 6-cup Bundt cake! So...we think the yield in the cookbook is slightly off or they are making huge cupcakes. I think the basic recipe can get you 20-24 cupcakes, not the 12 cupcakes listed.

Also, the recipe says to use 1/2 CUP lemon zest from 2-3 lemons. I used 4 organic lemons and got only 1/4 of a cup when using the microplane. Do they have really big lemons on the East Coast or am I missing something? Since the recipe called for 1/2 CUP zest in both the batter and the frosting, I zested all the lemons I had (about 6) and used all the zest I got out of them.

I made my first Instagram Video! It shows Rosie frosting the cupcake (with Macklemore playing in the background). Find it here. The frosting was tasty...it was a combo of butter, cream cheese, powdered sugar and lemon zest!

From: The Cupcake Diaries: Recipes and Memories from the Sisters of Georgetown Cupcake by Katherine Kallinis Berman and Sophie Kallinis LaMontagne
Cupcakes
2 1/2 cups all-purpose flour
2 1/2 tsp baking powder
1/4 tsp kosher salt
1 stick/8 Tablespoons unsalted butter, room temperature
1 3/4 cups sugar
2 eggs, room temperature
2 1/4 tsp vanilla extract
1 1/4 cups whole milk, room temperature
1/2 cup fresh lemon juice
1/2 cup freshly graded lemon zest (2-3 lemons) - this is what is listed in the recipe...I didn't get close to this amount from four lemons.
For the Lemon Cream-Cheese Frosting
4 Tablespoons unsalted butter, room temperature (1/2 stick)
6 oz cream cheese, room temperature
4 cup powdered sugar, sifted
1/2 tsp vanilla extract
1/2 cup freshly graded lemon zest (2-3 lemons) - again, they must have crazy big lemons in Washington DC! :)

Cupcakes:
1. Preheat oven to 350 degrees. Line a standard cupcakes pan with 12 paper baking cups.
2. Sift together flour, baking powder, and salt on a sheet  of wax paper and set aside.
3a. Measure out the sugar in a small bowl. Add the zest and rub together with your fingers to release the lemon's oil.
3. In the bowl of a stand mixer or in a bowl with a handheld electric mixer, cream together the butter and lemony sugar for 3-5 minutes, or until light and fluffy. Add the eggs one at a time, mixing slowly after each addition.
4. Add the vanilla to the milk in a large liquid measuring cup.
5. Add 1/3 of the dry ingredients followed by 1/3 of the milk, and mix thoroughly. Repeat. Stop to scrape down the bowl as needed. Add the last third of dry ingredients followed by the last third of milk. Mix slowly until just incorporated. Add lemon juice, and mix at low speed.
6. Scoop the batter into the cupcake pas using a slandered size ice cream scoop until the cups are 2/3 full, and bake for 16-18 minutes (start checking at 15 minutes) , or until a toothpick comes out clean. Transfer the pan to a wire rack to cool completely.

Frosting:
1. Combine the ingredients in a mixture and whip together at high speed until light and airy, approximately 3-5 minutes.

My friend Agnes gifted me Biscoff spread over a year ago and I have been eating it straight from the jar. Trader Joe's now has a version too. I also picked up these Belgium made chocolate sprinkles at Surfas. They are very thin and way better than regular jimmies.

I made Hershey's Perfect Chocolate cake in a 9 x 13 pan. It's a really easy cake made with, of course, Hershey's cocoa. It is an oil-based cake, with 1 cup of milk. I might try it with soy milk for a non-dairy version one day. The frosting is a mixture of cream cheese, Biscoff, vanilla and powdered sugar. Yummmmmy.

Two co-workers were celebrating a birthday. When I picked up my carrying case (love these Snapware cases), they left me this poem written on a plastic plate. Ahhh. So cute!

Chocolate Cake with Biscoff Frosting
You can make these into cupcakes, but you will need to double the frosting if you want to pipe the frosting. The cake is moist, and the frosting is light and tasty.

Recipe:
Chocolate Cake (from Hershey's Perfectly Chocolate Cake)
2 cups sugar (I used 400 g)
1 3/4 cups all-purpose flour (I used 245 g)
3/4 cup Hershey's Cocoa (I used 72 g)
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
2 eggs (room temperature)
1 cup milk (I used low fat milk, room temp)
1/2 cup vegetable oil (I used canola oil)
2 teaspoons vanilla extract
1 cup boiling water

1. Heat oven to 350°F. Prepare baking pans (see Hershey's recipe for various sizes such as rounds, cupcakes, bundt, and sheet cake). I used a 9 x 13 pan.
2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in the bowl of a standing mixer with paddle attachment.
3. Add eggs, milk, oil and vanilla; beat on medium speed 2 minutes.
4. On low speed, mix in the boiling water. Batter will thin out.
5. Pour batter into pans and bake.
6. 9 x 13 pan bakes for 35 to 40 minutes, until toothpick comes out clean. Cool for 15 minutes then remove onto wire racks to cool completely before frosting.

Biscoff Cream Cheese Frosting (from Biscoff website)
1/2 cup Biscoff Spread
1 (8 oz.) block cream cheese, softened (Biscoff uses Neufchatel)
1/2 cup powdered sugar, sifted
1/2 teaspoon vanilla extract

With a paddle attachment, mix all ingredients together until smooth.

My friend Rosie came over to bake! We were supposed to bake together...but somehow I ended up making Jello (that post is coming soon), lying on the couch, eating Red Vines and watching Top Gear. Anyway, I took photos of Rosie making a cake in my kitchen. That's close enough, no?

Rosie's been on the blog in the past (Lessons from a Pastry Chef and Challah) and is a recent graduate of the Baking and Pastry Arts program at the prestigious Johnson & Wales University in Rhode Island. She's heading back to finish her BS degree in a couple weeks...and guess who's going to Parent's Weekend?! Road Trip! (Well, JetBlue red eye trip to be exact). My friend Helen (Rosie's mom) and I are going to J&W Family Weekend in early October. I've known Rosie since she was three years old, picked her up from pre-school, been the emergency contact on her school forms, and watched her grow up - so I earned my place at Family Weekend! Can't wait to see Rosie in situ at her college. We have other day trips planned too...more on that later. ;)

I've made Flour Bakery's Yellow cake in the past (cupcake form) and I did make the ganache for the frosting. But frosting it? Rosie did all that...while watching Top Gear. Somehow, it took us all day to make this cake, but I'm sure if you are more efficient than us, you will get this done in a jiffy.

We had about one cup of frosting remaining. We planned to pipe a nice border, but time got away from us and we needed to head out. I dropped off a slice to my friend JustJenn and she said it needed more frosting. I hate frosting so I thought she was crazy (hee hee)...but you might want to use all the frosting.

We decided to put little ball decorations on the edges - chocolate balls, pearl balls from NY Cake Company, and silver nonpareils dragees. These silver balls aren't sold in California due to a lawsuit so my friend Mary of Popsicles and Sandy Feet mailed me some from the East Coast. Thanks Mary!

I went over to JustJenn's house for New Year's Oshogatsu yumminess...along with tons of traditional Japanese foods she created Royal T Milk Tea Cupcakes. They were delicious and I couldn't wait to try them myself!

Milk used in the cupcake is heated and the tea steeps in the milk. The frosting is so light and delicious. An easy combo of mascarpone cream, sugar and whipped cream...it is just so good!

Remember my 40th Birthday? I went to Bouchon's pop up bakery in Beverly Hills with justJenn and stopped by Crate & Barrel. I gifted myself this new cake stand...and had them gift wrap it!! I brought it home and put it aside...then came Christmas and mochi making and I forgot about it. Imagine my delight when I opened this Perfect Gift this year! :)

Sweet Valley High books started in 1983. I was 13 years old and made my mom buy countless books for me. Yeah, I've always been into chick lit and the RomCom. Anyway, in these novels, there is often the, as I call it, "electric moment." You know, when the girl sees the guy and it is electrifying. Or when their hands touch and she can feel the deep connection.

Well, I had that deep emotional connection. No, not with the Sweet Valley High guy, but with Mascarpone Whipped Cream Frosting.

We celebrated two birthdays at the library earlier this week and I made some mini cupcakes. The cupcake is Martha Stewart's One Bowl Chocolate cake with added espresso, and JustJenn's Mascarpone Whipped Cream Frosting.

The Mascarpone Frosting was divine. I'm not a fan of super sweet, buttery frosting, so this was heaven. It is light, slightly sweet and did I mention light? One of the birthday people said she could eat a whole bowl of the frosting. It is dangerous and delicious. Make it. You'll find that electric moment too.

Chocolate Espresso Cupcakes with Mascarpone Whipped Cream Frosting

Recipe:
1. Martha Stewart's One-Bowl Chocolate Cupcake - Make the recipe here, but add 1 T instant espresso powder (I use this brand) to the warm water to dissolve. It isn't overpowering, but it brings out the chocolate flavor. I baked the mini cupcakes for 10 minutes.

2. justJENN recipe for Mascarpone Frosting. Make this. Save some for the cupcakes and grab a big spoon and eat the rest.
