Cornmeal Pancakes for Pancake Day
It's National Pancake Day!

IHOP is giving away free pancakes (requesting a donation to a good cause) and they say: "National Pancake Day dates back several centuries to when the English prepped for fasting during Lent. Strict rules prohibited the eating of all dairy products during Lent, so pancakes were made to use up the supply of eggs, milk, butter and other dairy products...hence the name Pancake Tuesday, or Shrove Tuesday."

Adapted the recipe from Everyday Food's Basic Pancake recipe (I added a little cornmeal for texture). Here is what I used...

Dry Ingredients:
3/4 cup all-purpose flour
1/4 cup cornmeal
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt

Wet Ingredients:
1 cup soy milk
2 tablespoons olive oil
2 eggs

Follow directions on Everyday Food's recipe for mixing and cooking!

Your pancakes look great! I found a recipe that used a lot of baking powder that you had to let sit for about 20 minutes before making - they were so fluffy!

Okay, now I need pancakes! :D

Oooo, I made pancakes last night just two hours before pancake day. As I only eat pancakes every few weeks or so, I think that's close enough.

Weird how the Lenten aspect of it never came up in my 8 years of Catholic schooling. Clearly not the higher level of education my parents thought it was!

I'd love these w/o the cornmeal! My ex-boyfriend used to work at a bakery/cafe that made cornmeal pancakes. I never understood them, Lol :D
