Chocolate-Cinnamon Bundt Cake with Mocha Icing - I Like Big Bundts
Bundt #2

Today, it's the Chocolate-Cinnamon Bundt Cake with Mocha Icing!
The subtitle is: If at first you don't succeed and almost wire the entire library...try, try again.

See, the first time I made this, I confused a little thing called the teaspoon and tablespoon. Tea versus Table. Only the letter "b" and "l" are different. And I almost had the library flying.

The first time, I used two TABLEspoons of espresso powder instead of two TEAspoons. The cake baked up nicely but had a really, really strong coffee aroma. The kitchen smelled like a cranked up coffeehouse. I glazed it, photographed the cake and cut a slide for the "cross sectional photo." I usually take a bite of this piece to make sure the cake isn't strange and I used salt instead of flour or something. Man, my little bite was way tooooo strong.

So, I made it again with the proper proportions of caffeine. It still has a really strong coffee flavored jolt. If you like coffee and chocolate, this cake is totally for you. If you want a little less coffee, then ditch the extra espresso in the icing. (The cake has 2 teaspoons of espresso powder in the cake and another 2 teaspoons in the icing).

FTC disclosure: I got the Scharffen Berger Natural Cocoa Powder free in my swag bag at BlogHerFood '09 conference. I am not being paid by them to endorse or use their product. I'm just using free stuff...wouldn't you?! (The FTC came down with a ruling about full disclosure of free stuff and endorsements by bloggers. See here.)

Dietary notes: The cake can be made dairy-free if you ditch the chocolate chips or use dairy-free ones. The icing has butter, but you could leave it off and dust with powdered sugar.

I saved some of the mini chocolate chips to place on top of the cake! By the way, I definitely think you should use mini chocolate chips and not regular sized chips...the minis are more delicate.

See you back here tomorrow and every day from now til National Bundt Day (November 15th) for another Bundt! - mary the food librarian

First off, I love the idea of doing a series of bundt cakes! So yummy. I rarely make bundt cake, but they're soooooo good!! :) Definitely need to make more of them.

Second, this one in particular looks super amazing! I love coffee with chocolate...YUM! :)

Despite the espresso that's in it, how do you think this chocolate cinnamon bundt compares to the other that you've made?

I'm intrigued now and want to make this!

shaz said... [Reply to comment]

Oh my! Love the idea , will definitely visit every day to view the bundt parade. This coffe one sound awesome!

The Food Librarian said... [Reply to comment]

Monica, You know, I didn't even taste the cinnamon. This is very coffee-centric. It is made like the other cinnamon chocolate bundt (but uses oil instead of butter) but it is a totally different cake. I like the other bundt more! I think I'll make it again during this marathon b/c it is my favorite Bundt! :) - mary

you know what? i don't think i'd mind the two tablespoons of espresso, but then again, i'm a coffee addict. lovely bundt--the drizzle is so decorative!

Mary said... [Reply to comment]

I can't wait to find out what you are making tomorrow!

Anonymous said... [Reply to comment]

I'm so a coffee addict. I may have even liked your first version.

Megan said... [Reply to comment]

I have that recipe bookmarked from Bon Appetit - I just don't have an occasion to make it yet! But I will...

Oh Mary, you are the ulitmate bundt queen. make your earlier cinnamon bundt cake almost every other week. A bundt a day keeps the doctor away. I'm like pinkstripes, a coffee addict, so the earlier one excites me too! YUM!!

Hilary said... [Reply to comment]

The real question is, are your fellow librarians up to the challenge of consuming a bundt a day for 30 days?

Audrie said... [Reply to comment]

I use that same brand of espresso in my choc cakes too! This looks so good :)

This looks great! I made the pumpkin spice bundt cake and brought it into work and you were right, it was a hit. I can't wait to see what you make next.

I am totally loving this 30 days of bundts. Bundts are my favs, too, simply because no arseing around with pans, and no fancy decorating needed! This looks great, can't wait to try it. And lucky you getting free cocoa. I take anything free, so I'm with you!

Oh, I have to comment about this cake. It looks divine. I love how there are rows of chocolate chips embedded in the cake, and you can see them at the top of the cake slice.

Your photos of this cake are perfect, too. What camera do you use?

Anne said... [Reply to comment]

This sounds like so much fun! I love the first and last photos especially. Can't wait to see what else you come up with!

I like the coffee one. :)

Dear Memoria,
Thanks for stopping by... Here is a post about the camera equipment I use.

These photos were taken with the macro lens and a pair of Ego Lowel lights and a purple background. That product is here:

I love the "I like big bundts" photo!

Thanks for this cake - I know we'll love it!!!!!!!!

I love bundt cakes! But really, leave off the icing if you're dairy free? How about 2 Tbsp of Earth Balance or 1 Tbsp of oil or 1 -2 Tbsp of nut milk? That frosting will firm up even without the 2 Tbsp butter, you could even use water or add a bit of corn starch or tapioca if you're worried. Trust me, I've done these things. No prob. So did you eat the first cake anyway? I would have cut it into chunks and made bread pudding. Yum!!!

May I just say I absolutely love what your doing with the bundt cakes! I recently got a super nice bundt pan passed down from my great grandma, so now I can put it to good use! I hope you don't mind if I share your blog on my blog--it's too good of an idea not to share :-)

Yum...another winner!

Oooh, chocolate and coffee are a great combination! It looks gorgeous as always Mary :) I'll be adding it to my to-bake list, which is getting longer and longer by the minute!

Nancy/n.o.e said... [Reply to comment]

I love coffee + chocolate, so this recipe sounds great to me. Bummer that you had to waste the ingredients (and time) on the first version, but at least the cocoa was free, right? ;p

Lynna said... [Reply to comment]

I found your blog via tastespotting and was intrigued by the 30 days of bundt cakes. I can't wait to see all the yummy recipes. Just one question though- what are you going to do with all that cake??

Unknown said... [Reply to comment]

This looks so delicious it's making me want to go out and buy a bundt pan and make this. I think I might do that this week.

Anonymous said... [Reply to comment]

This looks great! I'm a huge huge fan of cinnamon, so I'm sure I'd like this. Bookmarking it for future use. I've never tried making bundt cakes, should get myself a pan and rectify that as soon as I can.

On another note, I love the 'I love big bundts" phrase! Hehe. Are you a Friends fan, or was it just a coincidence? :P

The Food Librarian said... [Reply to comment]

Thanks for stopping by! I don't eat all these Bundts myself! :) I bring them into my library and my co-workers have been going to town. I also bring them to another library to spread it out a bit. And my roommate will bring some to her work and family! If you were in Los Angeles, I'd bring you a Bundt! :) - mary

I'm not a huge fan of chococlate but there is something about when it is combined with coffee that's magic!

Amy J in SC said... [Reply to comment]

This looks dangerous but I can handle a little danger - especially if chocolate is involved.

I've used that cocoa in my coffee since getting back from SF. Yum.

Bella Baker said... [Reply to comment]

WOW!!! Yum! This looks spectacular! Coincidentally, I JUST purchased my first bundt pan over the weekend! Perfect timing by me bc now I can try all of your bundt cake options!! Yaaaay!
