Maria of Two Peas and Their Pod (who has a pea in the oven right now!) loves ricotta. She has a bunch of recipes using ricotta cheese. When I saw these muffins on her blog, I knew I had to make them.

My local store had a sale on blackberries so I bought a bunch...some for the muffins and more for me to eat with yogurt, oatmeal and just straight out the box. This recipe places a bit of batter in the muffin tin, then place the blackberries on top, followed by more batter. Brilliant technique as it avoids crushing your blackberries when folding them into the batter. A sprinkling of sugar in the raw or turbinado sugar makes a nice crunchy top.

They sound wonderful! Blackberries were on our Easter menu also as they were on sale here. Great substitution.

Fantastic. I love how pale they are. I can't even think of the right word to use; girlie, prissy, pure. They're just beautifully colored. And then there's the shout of blackish-red. I love it.

I tried this recipe yesterday. So, so delicious! Putting the berries in half filled muffin cups truly is brilliant! It's like getting a surprise with your first bite of the muffin.

these muffins looks pretty much perfect!! lemon and ricotta goes so well and love the addition of fresh blackberries too! i dont buy ricotta very often coz i only make pancakes with it...now i have a new recipe to try! thanks :)
