Muffin quest continues.

I had some leftover pumpkin from my Thanksgiving baking with my friend Diane. We made Joy the Baker's Vegan Pumpkin Bread. I forgot to photograph it, but believe me that is was tasty.

Very Culinary Blog made Pumpkin Muffins with Cranberries and Pecans (adapted from Betty Crocker) and I switched it up with walnuts. Two days before Thanksgiving and Trader Joe's was completely sold out of pecans!

These muffins were super easy, moist and not too sweet. I want to try them with halved fresh cranberries and some added crystallized ginger pieces.

In large bowl, mix together:
2 c all purpose flour
3/4 c sugar
1 Tablespoon baking powder
1 t cinnamon
1/2 t ground ginger
1/4 t salt

Combine the following in a small bowl. Then quickly fold into dry mixture with a spatula until just moistened. Do not overmix!!!
1 cup canned pumpkin puree (not pumpkin pie mix)
1/2 c canola or vegetable oil
2 eggs
1 c dried cranberries
1/2 c chopped nuts (walnuts or pecans)

Scoop into muffin tray greased with cooking spray or lined with muffin cups (I use an ice cream scoop). Top with sanding sugar or sugar in the raw (turbinado). Bake in preheated 400 degree oven for 20-25 minutes, until toothpick comes out clean.

I never used to bother about baking anything pumpkin (I'm not really fond of the pie) but ever since my husband's client's wife baked us a pumpkin cake / bread, I'm sold! This looks very yummy, esp with the cranberry in there.

I love this combination of flavors. I recently made a pumpkin bread with cranberries. Delish! Your muffins are gorgeous - great pics as always :)

I am using Google Sites! It is cool. I saw it on Esi’s Dishing up Delights and followed suit. You already have an “account” connected to any gmail/blogger account.

Be logged into gmail, and go to: http://sites.google.com/ (I go to my gmail account and click on “more” and click on “sites”)

Then you can create little web pages. It is like creating things on a Wiki. If you are doing recipes, make sure you make the site “public”

You create a “name” for each page and it creates a unique webpage. You can make links within the page. Very easy to use.

Then, you create a link in your blog post that links to the Google Site entry!

These were taken inside with the Lowel Ego lights. I'm very unoriginal...when you see a faded out green tree in the background, those were taken on my front porch! If it has a solid color background, those are probably taken indoor with the Lowel lights and construction paper in the background. - mary

OoO these look purdy and delicious. I'm lucky enough to still have some Libby's canned pumpkin stashed away so I may just have to whip some up myself. I recently learned how to do printable recipes, too!

I love muffins that turn out so darned muffin-like! The cracking on top, a slight dome - perfection! And the seasonal flavors don't hurt :)

I would never had thought of combining the two, but it clearly works. I may give these a go, esp as I have some fresh cranberries and some of my own baby squash/pumpkins still to use. Thank you for sharing and I wish you well for the New Year.
