Traditional Madeleines from Dorie Greenspan

FYI... I used the absolutely lovely Nielsen Massey Vanilla Bean PASTE in the madeleines for the Tuesdays with Dorie recipe. Some people wanted to know where you can get it...

If you are in Los Angeles, Surfas carries it for $8.76 (Culver City's greatest kitchen supply store) as well as Hipcooks (they have excellent cooking classes)

Online...I've found it here.

From the Nielsen-Massey website, you can search for stores near you - I would call ahead because not everyone carries the paste (although many stores carry their very popular and tasty extracts). They say a lot of their products are carried by Williams-Sonoma (online $11.00) and Sur la Table (didn't see it online)

I just found your blog. You have some awesome pictures.

One thing--cooking with the Nielsen-Massey's Vanilla Bean paste--do you just substitute the call for regular vanilla extract? I'm assuming you would do this when you wanted a stronger vanilla taste/visible specks of the vanilla.

hi jeni, you can replace one-to-one for regular extract. in addition, 1 tablespoon of paste is one vanilla bean. btw, are you near a trader joes? i just found a vanilla paste (totally cheap $5) at trader joes. the ingredients look the same and someone posted a year ago on chowhound that nielsen-massey is probably the manufacturer of the trader joe's stuff. i'm going to buy some next time and do a blind taste test! enjoy!!

I just came upon your blog searching for chocolate gingerbread cookies, thank you! I found this vanilla paste at our TJMaxx in No. California! I LOVE this stuff too, it's wonderful. We are a very small town with no shopping except a Ross, TJMaxx, and Kohl's, and we're an hour away from the next city, so I love trying new things and felt like I found gold when I found this vanilla.

so just curious since the recipie called for 2 vanilla beans how much vanilla paste did you actually put in cardamom vanilla bundt cake?

@Bobbi Dear Bobbi, I don't have the bottle in front of me now, but it says how much to use for "one bean." I believe it is 1 tsp per bean. - mary
