It's Day 3 of I Like Big Bundts: 30 Days of Bundt Cakes...and today it's a yummy fall treat! For those just joining me on this crazy baking endeavour, I'm making 30 days of Bundts leading up to November 15th - National Bundt Day.

And, please people, I'm not just doing this for my health! ;) I'm hoping to inspire you to make a Bundt cake! Let me know if you do...Mary Ann of Meet Me in the Kitchen and Maria of Two Peas and their Pod both made Bundts this weekend!

I used two cups of granny smith apples...diced into small bite-sized pieces.

Don't worry if the mix gets a bit curdled. It'll all come together in the end.

It is light, moist, full of fall flavors and Not. Too. Sweet. With "only" 1 cup of sugar, the flavors of the pumpkin and apple aren't overwhelmed by sweetness.

I've heard a lot of people that are anti-apple and pumpkin being mixed together. I've been kinda intrigued and as I have 25lbs of apples and 5 cans of fresh pumpkin puree... I was hoping to mix the two in something!!! Thanks for the bit of encouragement I needed to try it!

Yikes! What am I going to do? you posted another pumpkin bundt recipe!!!! How did you know I have been wanting to make a pumpkin-apple cake?1!
It is going to take willpower not to make this today. I will probably whip it up tomorrow.
The other bundt I made was delicious.

You know, I've always suspected that librarians have a soft spot for bundt cakes. It just seems natural, doesn't it? I love your bundt concept! (I made what is usually a bundt cake in a kugelhopf pan this weekend . . . does that count??)

I haven't posted it yet, but I just made a recipe very similar to this in small loaves. I was hesitant to put pumpkin and apple together, but it was delicious. Don't you just love those big apple pieces in each slice!

how fun! a reader just alerted me to your series--I did a brown sugar poundcake today in my mom's old bundt pan.

I love having her old, heavy pan and the familiar design it makes. I'll be back to bookmark some more recipes to use with my pan!

I just posted a similar recipe that I made in loaves (I do love a bundt though!). I really liked the apple and pumpkin combination. I'm going to give your recipe a try and compare the two.

I made this bundt cake this weekend, and it came out GREAT. I'm especially happy that there are leftovers - it's kind of healthy enough for breakfast, right?
