It's hot in Los Angeles.
Like 91 F hot.
And our poor Dodgers get rained/snowed out in Minneapolis.
I wish I could send Minneapolis some of our heat. And they give us some of their snow pack for our drought!
(Don't get me started on the whole Clippers fiasco. I hope Oprah buys the team.)

Strawberry and Cream Biscuits
These are like scones/biscuits. Cut up strawberries and fold in with the flour/butter mix. Be sure to coat the strawberries in flour before adding the cream.

I cut them into rounds. Next time, I would have thicker biscuits. I think these are a little too thin.

This happened this morning at the #farmersmarket. Strawberries. Strawberries. 1/2 flat.
It's strawberry season in California now (well, we grow strawberries all year, but now they are crazy sweet good). Like "get 1/2 flat of strawberries (6 green plastic containers) for $9-11 at the Farmer's Market" strawberry season. Deliciousness.

This is total comfort food. 
Bisquick. 
Sour Cream.
Old school recipe. 

After all that happened this month so far, I needed comfort food and these are the ticket.

My mom used to make these biscuits when I was little. My cousin makes them small and I think they are better that way (and you can eat more).

My cousin has an index card written by her mom. I'm sure you can make this all from scratch, but Bisquick has a special place in my memory and it's foolproof.

On Sunday, I went to my parent's house and made some little ham and egg biscuits.

This is super easy to make. Just some Bisquick, sour cream, a bit of sugar, baking soda and an egg.

I made mini biscuits with a one-inch (or so) circle because they are cute and you can eat a bunch. Sure, if you count the calories, it's all the same, but I'm always more satisfied if I can eat four small ones instead of only one big one.:)

By the way, I only had my cell phone camera to take these photos. Sorry about the quality. But the quality of the biscuits? Yummmmmmy.

Sour Cream Bisquick Biscuits

Mix together in one bowl:
2 1/2 cups Bisquick
1/4 cup sugar
1/2 teaspoon baking soda

Mix together in a small bowl:
1 cup sour cream
1 egg

1. Preheat oven to 400 degrees.
2. Pour the wet mixture onto the Bisquick bowl. 
3. Stir until just combined. Don't overmix.
4. Knead dough 5-7 times on a flour or Bisquick covered surface.
5. Pat or roll out and cut into desired shape.
6. Bake at 400 degrees until golden brown on top and bottom (depends on how big you make them - around 12-20 minutes)

Strawberry Shortcakes
California strawberries are exploding all over the Farmer's Market. A three-pack of deliciousness runs $5 - $8. Yum!!

So what to do to showcase these lovely fruits?! Strawberry shortcake!

I used the Tartine (delicious San Francisco bakery...a must-go on any trip up North) recipe for the biscuits from their cookbook, Tartine.

These biscuits come together in no time! Cut in some butter, mix in heavy cream, pat out the dough, cut and brush with sugar. Easy peasy!

I split the biscuit, layered in some strawberries (macerated in sugar for 15 minutes), and some whipped cream (with a little sugar and vanilla).

The Tartine recipe makes 6 four-inch biscuits but I used a small circle cutter and got 15 minis. Serving them in cupcake liners makes it easier for my co-workers to grab (I did put out forks).

Mixed-Berry Shortcakes - Be sure to pick up the book to get their berry-caramel sauce!

Biscuits
2 1/2 C + 2 T (12 1/2 oz) all-purpose flour
1 T baking powder
1/4 c sugar
3/4 t salt
7 T unsalted butter, very cold
1 C heavy cream, very cold
Extra cream and sugar for the tops

1. Preheat oven to 425 degrees.
2. Sift flour, baking powder, sugar and salt in a mixing bowl.
3. Cut butter into small pieces, and cut butter into dry ingredients. I used a pastry blender, but you can use 2 knives or your fingers to get pea size pieces of butter.
4. Make a well in the center and pour in the cream. Gently mix the dough together with a wooden spoon or your hands. Don't overmix...it'll look shaggy.
5. Turn the dough onto a floured surface and roll out to 1-inch thick. I didn't have time for a roller so I just patted it out. Tartine uses a 4-inch circle cutter (for 6 circles). I used a small 2-inch circle cutter and got 15 biscuits.
6. Place biscuits on baking sheet (I placed on a Silpat) and brush tops with heavy cream and sprinkle with sugar.
7. Bake until golden, 10 to 12 minutes.

For my shortcakes, I cut about a pint of strawberries and macerated them in some sugar - amount of sugar depends on the sweetness of your strawberries. I whipped some heavy cream (about 1 1/2 cups) and with sugar and vanilla (to taste). Assemble and serve immediately or within a few hours. I assembled mine at 6:30 am, drove to work, stuck them in the fridge and served them at 11:00 am for a coffeebreak/pre-lunch treat. :)

Sweet Potato (not) Pumpkin Biscuit - Tuesdays with Dorie

For this week's Tuesdays with Dorie selection, Erin of Prudence Pennywise selected Sweet Potato Biscuits, page 26 of Dorie's book, Baking: From My Home to Yours. Be sure to check out Erin's blog...it is lively and fun!

I messed up and ATE my sweet potato. Yes, I ate it! I had baked some up for a Bundt and wasn't thinking when I was seduced by the fall scent of fresh yams/sweet potatoes (I forgot which ones I purchased!) and ate the remaining sweet potato.

So, I used leftover canned pumpkin instead. I made 1/4 of this recipe.

They were easy to make, but I think I should have added more sweetness to the mix. Dorie's recipe uses canned sweet potatoes, but I was going to use fresh. Since sweet potato is sweeter than pumpkin (as the name implies...hee hee), I should have added more sugar.

I didn't have a biscuit cuter and since I'm pretty square, I made them in my likeness. Yes, nerd biscuits by someone who ate her ingredient.

I'll have to try these again with the proper ingredients and cutting utensils. In the meantime, why don't you go visit some fellow Tuesdays with Dorie bakers and see how they made out?
