Hello! I know, it's been forever since my last blog post. I've been working, eating, catching Pokemon, listening to the Hamilton soundtrack, and hanging out with my friends and family. I have been baking, but most of the stuff are repeats or greatest hits (brownies, bundts, and cookies).

I'm now on Snapchat...so if you want to take a look at the mundane covered in stickers (isn't that what Snapchat is about?!), then I'm @foodlibrarian on Snapchat.

So, onto this cake! It's summer and that means hella stone fruit. However, I missed my weekly Farmer's Market run and had to pick up peaches at the supermarket. Oh, the sadness. These peaches were so boring and lacking in flavor. I thought about adding them to a smoothie...and baking with them. I figure adding some sugar and spice would liven these up!

As I type up this post, I realize I made this cake with nectarines and almonds in 2011, but totally forgot about that post. It's 2016 and 2011 was a long time ago! :)

Peach Cake

On my Snapchat, I started at 4 am and took photos of the process. Making the batter, peeling peaches, layering the batter... and then I realize I'm using the wrong size pan. I had an 8" instead of 9" square. It was before 5 am and I had that wishful thinking moment of...let's bake it and just see what happens. Well, it was terrible because the center never cooked and the edges got dry. I was quite sad when I tossed that mess. (Remember, the difference between 8" and 9" square isn't just "an inch". 8x8=64" and 9x9=81" so that is 17" difference (yes, you should factor in the height, but for simplicity sake, I just want to say that using the right pan size is important!)).

But luckily (?), I had two more bad supermarket peaches and tried again after work! Here goes:

Recipe:
Adapted from the Barefoot Contessa's Fresh Peach Cake

Peach Cake

1/4 pound (1 stick) unsalted butter, at room temperature
1 cup (200 grams) sugar
2 extra-large eggs, at room temperature (I used 2 large eggs from the fridge, put in warm water for 5 minutes before use)
1 cup sour cream, at room temperature
1 teaspoon pure vanilla extract
2 cups (280 grams) all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt

2 large ripe peaches, peeled, pitted and sliced (her recipe calls for 3 large peaches but I used 2)

Topping:
1/2 cups (100 grams) sugar
1 teaspoon ground cinnamon

1/2 cup chopped pecans

Directions:
1. Preheat the oven to 350 degrees F. Grease a 9-inch-square baking pan. I created a parchment paper sling for easy removal.
2. In a bowl, sift together the flour, baking soda, baking powder and salt. Set aside.
3. In a small bowl, combine the 1/2 cup sugar and the cinnamon. This is the topping. Set aside.
4. In the bowl of the KitchenAid with the paddle attachment, cream the butter and sugar together until light and fluffy on medium speed (about 4 minutes). With the mixer on low, add the eggs, one at a time, then the sour cream and vanilla, and mix until the batter is smooth.
5. With the mixer on low, slowly add the dry ingredients to the batter and mix just until combined.
6. Spread half of the batter evenly in the pan. Top with half of the peaches, then sprinkle with two-thirds of the sugar mixture. Spread the remaining batter on top, arrange the remaining peaches on top and sprinkle with the remaining sugar mixture and the pecans.
7. The recipe says to bake the cake for 45 to 55 minutes, until a toothpick inserted in the center comes out clean. However, my cake took 60 minutes to bake (both times I made this cake, so don't be surprised if it take a little longer).

This is the Barefoot Contessa / Ina Garten's Apple Cake Tatin. Instead of the usual pie crust topping, she covers the apples and caramel with a cake.

I used these beautiful sweet/tart apples from Ha's Apple Farm (available at many So Cal farmer's markets). Ina's recipe calls for Granny Smith apples, but these worked fine and were delicious.

Caramelized sugar is made (I'm always amazed that water and sugar can be heated to make this!) and tops the cut apples. I judged it by color and didn't use the thermometer. The presentation of the cake is very pretty, no?

The "cake" part is very delicious. Soft and light...I like it much more than a traditional apple tatin, but then I love upside down fruit cakes!

Barefoot Contessa's Nectarine Cake
Barefoot Contessa's Fresh Peach Nectarine Cake

Oh, Ina. I just heart you.
Ina makes a Fresh Peach Cake to celebrate summer. And I'm celebrating the soon-to-be end of summer with a Fresh Nectarine Cake. It takes Los Angeles a while to get into fall...especially since it was 95 degrees this weekend!

This recipe has two (count 'em! two!) layers of fresh peaches or nectarines. Lay the thick batter on the bottom of the pan, top with fruit and sprinkle with cinnamon sugar. More batter goes on top and another layer of peaches/nectarines. Ina tops her cake with pecans but I used sliced almonds. I only did half the cake as one of my co-workers doesn't eat nuts (before you go nuts, she not allergic, nuts just bother her tummy).

If you still have peaches or nectarines available, make this cake as a good-bye to summer! The cake is moist, the fruit is sweet and delicious and it's perfect for breakfast or tea...or anytime!

Recipe:
Adapted from the Barefoot Contessa's Fresh Peach Cake

1/4 pound (1 stick) unsalted butter, at room temperature

1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt

1/2 cups sugar
1 teaspoon ground cinnamon

1/2 cup chopped pecans (I used about 1/4 cup silvered almonds on half the cake)

Directions:
1. Preheat the oven to 350 degrees F. Grease a 9-inch-square baking pan. I placed a sheet of parchment paper and sprayed with with Pam with Flour.
2. In a bowl, sift together the flour, baking soda, baking powder and salt. Set aside.
3. In a small bowl, combine the 1/2 cup sugar and the cinnamon. This is the topping. Set aside.

Today's my last day visiting my friends Racheal and Lee in the DC area. Yesterday, I made a light dessert with some ingredients we had on hand.

Adapted from the Barefoot Contessa's Lemon Yogurt Cake
This is 1/4 of Ina's recipe, and it made 5 regular size cupcakes.

sift together (dry):
1/4 c + 2 T flour, 1/2 t baking powder, dash of salt

whisk together (wet):
1/4 c yogurt (I used French vanilla Yoplait yogurt), 1/4 c sugar, 1 egg, 1/2 t zest (I used orange because that is what we had on hand), 1/8 t vanilla

oil: 2 T oil (I used vegetable oil, but have also used olive oil)

1. Combine the wet and dry ingredients until smooth.
2. Fold in oil until combined.
3. Bake at 350 for 15-20 minutes, until toothpick comes out clean.

Ina's recipe has a lovely lemon syrup, but I didn't have any lemons. I split the cupcake and spread some strawberry jam in the center with diced strawberries. I filled and topped one of them with the remaining Yoplait vanilla yogurt.

The lemon sauce would have been great on this, but luckily the fresh California strawberries were nice and tasty.

Since Racheal's big blowout California baby shower was postponed because she is now on modified bed rest for early contractions, I made a small breakfast shower to present her with gifts from friend and former neighbor, Diane and me. Yes, that's the Cinnamon Chocolate Bundt cake I love so much! :)

And if you think Racheal and I just sat around vegging out and eating for a week, you are wrong. We had a book discussion group too! Well, sorta. We watched both BBC's "Colin Firth in his glory" Pride and Prejudice as well as Bridget Jones's Diary. Then we had a lively discussion comparing the two movies that are based on Jane Austen's classic. Deep, in-depth discussions of Mr. Darcy's gaze at Elizabeth while she played the pianoforte, and when Mark Darcy looks at Bridget during her blue soup dinner! And, we discussed the latest issue of People...since we both read it cover-to-cover. Such an academic vacation, no?

If the mom is this cute in these hooded towels, the baby boy is going to be adorable. Before the trip, I took my mom with me to Babies R Us and she was amazed there was a whole wall dedicated to pacifiers...times have changed from cloth diapers!

I'm in DC visiting my friends Racheal and Lee who used to live in Los Angeles. She is on modified bed rest for her first pregnancy, her husband is on a business trip, and we are hanging out having a slumber party with pizza deliveries, take-out, naps, and lots of cable TV and movies (you know, all for the welfare of the baby...)

For dinner, I made a roast chicken with potatoes and carrots. Seriously, there is nothing better than potatoes roasted in chicken drippings. Yummmmmmy! However, the only problem was that I put the 4 pound chicken on the roasting pan upside down. When I tried to be cool and carve said chicken on Racheal's yet-to-be-used-but-received-three-years-ago-at-their-wedding meat cutting board (with "meat juice" border), my knife just keeps hitting bones. I mumble to myself, "This chicken is like me. No breasts." Luckily, I finally turned it over and found the hooters.

I used granny smith, braeburn, and gala apples in this crisp. I pitted and halved a few fresh cherries. This photo was taken before I realized I forgot the cinnamon and nutmeg! Next, I mixed in the missing spices. The topping is a mixture of butter, oatmeal, butter, flour, other stuff, and butter. Get the recipe on the Food Network website.

It's Day 3 of my week long celebration of National Library Week! Today, it's all about favorite things!

Up first, California Strawberries! They are delicious, delicious, delicious and the first sign of the soon-to-come onslaught of stone fruits and other lovely summer delights! Strawberries have always been my favorite!

This is the Barefoot Contessa's Strawberry Country Cake. It's Cake (my favorite). It's Strawberries (oh yes). It's Whipped Cream (come on, who doesn't love fresh whipped cream!?!)
You can find the recipe here on the FoodNetwork website. It makes two cakes and you freeze one for later in the summer!

One of my favorite shows is America's Best Dance Crew on MTV! Congrats Los Angeles Quest Crew! Not that I'm a hip hop dancer (remember, I have so little rhythm I can't do the rhythm method), I found myself txting in votes along with 14-year old kid next door. Sigh. One day I'll act my age.

It's National Library Week! All this week, I'm highlighting a library thing. Today, it's movies and music. I know some adults haven't been to their library since they were kids and think libraries only have books...but many libraries have current DVDs and music CDs in their collections. Sometimes you might have to wait a bit if there is a queue, but the check outs are often free or less than a rental store. In our current economic situation, libraries may be able to entertain you with movies, books, and music!

I love the whole store and unfortunately can't send you the refrigerated Mocha yogurt, goat cheese, thin spinach pizza, mochi ice cream and so much more. Included: Mini milk chocolate peanut butter cups (addicting), Japanese ginger cookies (soooo yummy), my favorite pretzel sticks, lemon curd (easier than making it from scratch and you can't see how many yolks you are eating), dark chocolate bars, chile spiced dried mango, tomato and roasted red pepper soup (I can live on this), and my new (childhood memory) favorite: Trader Joe's O's. I took Ina's recipe for her Orange Chocolate Chunk Cake and used blood oranges instead. Here's the recipe.

I don't think I greased my pan very well...a bunch of chips stuck!

After baking, a mixture of orange juice and sugar is heated and brushed/poured over the cake.

When cooled, a ganache of semi-sweet chips, heavy cream and instant coffee (I used instant espresso powder) is poured on top.

Recently, Cheryl, the Children’s Librarian, brought in a basketful of the most adorable citrus fruit from her aunt’s backyard! Have you ever met the CALAMANSI? Oh, you should! They are petite, perfectly round and have a sweet and sour personality.

According to Alan Davidson’s The Oxford Companion to Food (2nd edition, 2006) (oh yeah, I’m pulling out the reference books now!):
Calamansi (or kalamansi or calamondin/kalamondin) is a hybrid of the mandarin orange and the kumquat. It is a small citrus fruit of the Philippines which plays an important role in Filipino cookery.

made cute loaves in November and recently, Butter & Sugar made an Orange Yogurt cake. Both took inspiration from the Barefoot Contessa’s Lemon Yogurt Cake.

I made a few changes to her recipe to use the Calamansi and Meyer Lemons. Click here for Ina's recipe!

Calamansi & Meyer Lemon Yogurt Cake
This cake has a lovely crumb!

Calamansi & Meyer Lemon Yogurt Cake
Dry ingredients, sifted together:
1 1/2 c all-purpose flour, 2 t baking powder, 1/2 t salt

Wet ingredients, whisk together:
1 c low-fat lemon yogurt from Trader Joe’s (because I didn't want to leave the house to get the whole-milk plain yogurt, which is actually hard to find - they all seem to be non-fat or low-fat. Next time, I might use Greek yogurt since I always have this around.)
1 c sugar
3 large eggs
2 t grated citrus zest (I used 1 t calamansi and 1 t meyer lemon)
1/2 t pure vanilla extract

After mixing the dry and wet ingredients together, fold in oil:
1/2 c olive oil (Ina uses vegetable oil, but I thought adding some Omega-3s would be a good thing!)

Ina uses a loaf pan and bakes it for 50 minutes (350 degrees), but I used a 9" round and baked it for 40 minutes.

Syrup:
1/3 c freshly squeezed juice (I had 80% calamansi and 20% meyer lemon)
1/3 c sugar
While the cake was baking, make the syrup by dissolving sugar in small pan with lemon juice. After the cake comes out of the oven, let sit for 10 minutes. Remove from pan, and poke some holes in the cake with a toothpick. Pour or brush on the syrup.

Ina has a glaze of juice and powdered sugar, but I just dusted it with powdered sugar.

This cake is really delicious. It is light, very moist and wonderful for a breakfast or tea snack. As you can see by the many adaptations, you can make it any way you want. And now that there are lots of citrus around, there is no excuse for not making this!
