Split Level Pudding - Dorie Greenspan

Tonight is a night for pudding.

Pudding was one of the things we "made" as kids. Sure, it came out of a square box and you just added milk, but it was "cooking" to us kids.

Now that I'm grown up, I make it from scratch.

But, today, I just wish I could be a kid again.

Because then my friend, Lisa would live 5 houses down the street and we would play all the time. Sleep overs. Picking pill bugs in the garden. Forming clubs...complete with membership cards in the backyard clubhouse.

Lisa and I went to separate colleges and would lose touch for stretches of time over the years. Last May, I called her dad and got her phone number in Minnesota. As it has always been in our lives, we picked up like we just saw each other last week. I wished her happy birthday, and she was filled with news! She was in school getting her Master's degree, her four kids were healthy and happy, and she was engaged to a her college friend. After an uneventful one date in college, they reconnected after all these years.

Then, after a few emails and our usual promises of keeping in touch again, time just flew by...

Today, I learned that she has Stage 2 breast cancer. She's had surgery and will start chemo in seven days.

I'm in shock and sad. And guilty that I didn't know sooner and worked harder to keep in touch. Sometimes, I know more about people in my "blogging" world than someone I've known since the 2nd grade.

Grown up stuff like breast cancer can suck it. Today, I need pudding and to think about my friend Lisa and memories of us riding our bikes to school and walking to Winchell's donuts. My friend Lisa is a fighter and she'll be wearing a pink survivor shirt soon enough. I know she is surrounded by a wonderful family and community of friends. And she will always have a friend here in Los Angeles.

Oh yeah, that nice guy from college? He married her as soon as he found out. So congratulations Lisa and Jason on your recent nuptials...and kick this cancer in the butt.

For this week's Tuesdays with Dorie selection, Garrett of Flavor of Vanilla picked Split Level Pudding, pages 384- 385 of Dorie's book, Baking: From My Home to Yours.

I only made 1/4 of the recipe. I used milk chocolate for the ganache and it came out a bit hard (my 1/4 measurements may have been off too). I made the vanilla pudding using just a whisk and skipped the food processor. I sifted the cornstarch and salt mixture instead of food processing it. The small amount was fine with a whisk, but if I make the full recipe, I'm going for the food processor. It only too a few minutes for the pudding to thicken.

For this week's Tuesdays with Dorie selection, Julie or Jules of Someone’s in the Kitchen picked Flaky Apple Turnovers on page 316 of Dorie's book, Baking: From My Home to Yours.

Ah, my life filled with procrastination knows no bounds. I started way late on Monday night, baked them this morning, and came home from work to post it! Each time the schedule of recipes comes out on the Tuesdays with Dorie website, I plan to make everything early. Yeah. Maybe next time! :)

I read the directions. A couple times. Really.

But I was also super duper tired, and completely misread the part about the size of the circle. It is about 4 inches and I used a small biscuit cutter instead! Oops. Therefore, I couldn't fold over my turnover to save my life. Unless I wanted to have one piece of apple in each one...which would turn these into just half moons of pie dough. So, at 4:30 this morning, I made the executive decision to put a circle of dough on top!

I used Gala apples and skipped adding butter to the apples...I figure there was enough in the dough.

I didn't eat them, but the dough was quite flaky. I put sanding sugar on top of an egg wash.

For this week's Tuesdays with Dorie selection, Susan of She’s Becoming DoughMessTic selected Chocolate Souffle, on page 406 of Dorie's book, Baking: From My Home to Yours. Susan is such an active baker! She is a true artist too...you should see some of her custom cookies and cakes. I don't understand how anybody actually eats her creations, they are too pretty!

I made 1/4 of the recipe and did it all by hand. I have the cutest mini ramekins and 1/4 would have made 5 of them. I baked the minis for 17 minutes at 400 degrees.

Souffles are impressive and yet pretty easy to make! If you can whip egg whites and fold ingredients, you can make a nice souffle. Impress your friends with this delicious dessert.

For this week's Tuesdays with Dorie selection, Melissa of Life in a Peanut Shell chose Espresso Cheesecake Brownies, page 104 of Dorie's book, Baking: From My Home to Yours.

I baked this week's entry early this morning before my first (and hopefully only) day of jury duty. It has been too hot in Los Angeles to cook any other time. I am now starting this post using my iPod Touch and free WiFi at the courthouse...how do you iPhone people manage this keyboard?! My finger is cramping, I keep hitting the wrong letters, and oh my gosh, I'm getting motion sick seeing those letters pop out at me. (I have an LG Envy phone and it has a "raised" touchable QWERTY keyboard that I can use without looking. Um, I need to be schooled by my iPhone peeps or eventually forget getting the iPhone and pick up the Blackberry.)

I skipped the sour cream topping and don't really have a review because I can't eat them...dairy is pretty much a foe of mine now. I'm crazy not happy about that. Sadly, I now chew (to check if I accidentally used salt instead of sugar and to check the texture) and then I spit it out. Sigh. However, the flavors I did get were pretty tasty!! :)

...Back home now for lunch, shoot some photos and post this entry (using a real computer keyboard! :) I am crossing my fingers I don't get picked during the second session of jury duty. They haven't called anyone yet and there are over 100 of us reading, surfing the net, and dozing off. Los Angeles County uses a one trial or one day system...so if I can just make it to 5 pm...

Creamiest Lime Cream Meringue Pie - Food Librarian

For this week's Tuesdays with Dorie selection, Linda of Tender Crumb decided on Creamiest Lime Cream Meringue Pie on page 337 of Dorie's book, Baking: From My Home to Yours.

Have you checked out my friend Linda's blog, Tender Crumb? She's well on her way to being a superstar pastry chef! Everything she makes is yummy and pretty. And, as I learned after a trip with JustJenn, two food bloggers should not shop at Surfas together...it is simply an exercise in enabling. Linda is a UCLA Bruin too (Sproul Hall rocks!) Awesomeness!

I had some issues with the cream. You need to get it to 180 degrees....but I was using "new math" or something and only got it to 150 degrees.

First, my digital thermometer didn't work (hum, digital thermometers need batteries...duly noted). Then, I tried to use a candy thermometer and "manual/non-digital" thermometer. But I couldn't get it up to 180. Sure, I got thickness. Dorie says the filling "will start to thicken and the whisk will leave tracks." Dude, I had more tracks than Sid & Nancy. But I only had 145-150 degrees.

As I was trying to hold the metal pan over a double boiler with a potholder as well as the thermometer with the left hand, and whisk with my right hand, the pan kept moving around...letting out some of the steam. I was getting such a facial. Who knew the spa qualities of this dessert?!

Finally, after 12 minutes, I had a thick cream that tasted good and gave up on the temperature. It was cooked and wouldn't kill anyone, I decided! :)

I found that I wanted to make just a small dessert so I deconstructed it and laid some graham crackers on the bottom, the cream and a little meringue that I piped out and broiled a bit.

Apple, nuts, raisins and glaze. Pretty simple and sweet. Some people say they didn't have enough glaze and doubled the recipe, but I like a light touch on any frosting so it was fine with me.

A little bit of orange zest in the batter gave it a good chocolate and orange flavor. Those two flavors make a great couple. Dorie suggests a white chocolate dippy topping, but I opted for some powdered sugar.

Classic Banana Bundt Cake - Food Librarian

Whoo hoo!! It's my turn to pick a recipe for Tuesdays with Dorie! Awesomeness in a blogger-nerdy-baker happiness sort of way. Know what I mean?!

As you may know, I'm a huge Bundt fan. Huge. I think I've made over 10 Bundts on this blog. The American-made Nordic Ware Bundt was trademarked in 1950 and is, in my book, an engineering marvel!

Although some people just don't understand this, I love cake but don't care for frosting. And the Bundt? It's perfect. Even if you put a thick glaze on it, the ratio of cake to frosting is just right. And sometimes, it doesn't need any frosting or glaze at all. Yes, the Bundt rocks. Big time. Let's all just take moment to salute the awesomeness of the Bundt. Thanks.

This recipe, on page 190 of Dorie Greenspan's book: Baking: From My Home to Yours is from her friend Ellen Einstein who owns Sweet Sixteenth Bakery in Nashville.

And you know what? Holy smokes!! This is delicious!

I made mine with sour cream, but you can also use plain yogurt. Dorie suggests a lemon glaze but I skipped that in favor of a simple dusting of powdered sugar. I'm sure chocolate chips and walnuts would be nice additions too.

Classic Banana Bundt Cake
Page 190, Baking: From My Home to Yours.

Ingredients: Makes 1 Bundt Cake (14 servings)

3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
2 sticks (8 ounces) unsalted butter, at room temperature
2 cups sugar
2 teaspoons pure vanilla extract
2 large eggs, preferably at room temperature
About 4 very ripe bananas, mashed (you should have 1 1/2 - 1 3/4 cups)
1 cup sour cream or plain yogurt

Center a rack in the oven and preheat to 350 degrees F. Generously butter a 9- to 10-inch (12 cup) Bundt pan. (If you use a silicone Bundt pan there’s no need to butter it.) Don’t place the pan on a baking sheet - you want the oven’s heat to circulate through the Bundt’s inner tube.

Whisk the flour, baking soda and salt together.

Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter until creamy. Add the sugar and beat at medium speed until pale and fluffy. Beat in the vanilla, then add the eggs one at a time, beating for about 1 minute after each egg goes in. Reduce the mixer speed to low and mix in the bananas. Finally, mix in half the dry ingredients (don’t be disturbed when the batter curdles), all the sour cream and then the rest of the flour mixture. Scrape the batter into the pan, rap the pan on the counter to debubble the batter and smooth the top.

Bake for 65 to 75 minutes, or until a thin knife inserted deep into the center of the cake comes out clean. Check the cake after about 30 minutes - if it is browning too quickly, cover it loosely with a foil tent. Transfer the cake to a rack and cool for 10 minutes before unmolding onto the rack to cool to room temperature.

If you've got the time, wrap the cooled cake in plastic and allow it to sit on the counter overnight before serving - it's better the next day.

Optional Lemony White Icing:
Sift 3/4 cup confectioners' sugar into a bowl and squeeze in enough fresh lemon juice (start with 2 teaspoons and add more by drops) to make an icing thin enough to drizzle down the Bundt's curves.

Half batch or muffins:
If you want 1/2 the recipe and make muffins, Dorie Greenspan wrote it up herself on this 2008 entry on Serious Eats: Banana Cake Big and Small. She added some chocolate to this one. Yield 12 muffins, bake 28-32 minutes

I've never made vanilla ice cream! Thanks Lynne for picking this recipe...it's perfect for this hot summer!

This vanilla ice cream has heavy cream, whole milk, egg yolks, sugar and vanilla. I used vanilla paste to get those nifty little vanilla bean specks.

I made an ice cream sandwich with two Ginger Spice Cookies. Yum! These remind me of the ice cream sandwiches at Diddy Reese in Westwood. It's a landmark at UCLA. Cookies for $.25 and ice cream sandwiches with Dreyer's ice cream for a buck (prices have gone up, but only a little). It's 100% sweetness.

For this week's Tuesdays with Dorie selection, Susan of Sticky, Gooey, Creamy, Chewy selected Raspberry Blanc-Manger on pages 398 and 399 of Dorie's book, Baking: From My Home to Yours.

The Blanc-Manger. I thought it was a cousin of the Mont Blanc fountain pen.

Turns out it's a cousin of the panna cotta with some almond meal, whipped cream, milk, raspberries and gelatin. It is pronounced: "blah-mahn-jhay"

Happy Bastille Day! I went to the Los Angeles Bastille Day festivities in Elysian Park on Sunday, and today Tuesdays with Dorie celebrates with brioche!

For this week's Tuesdays with Dorie selection, Denise of Chez Us picked Brioche Plum Tart on pages 54 and 55of Dorie's book, Baking: From My Home to Yours.

The tart is a brioche dough topped with fruit. Yes, a combination of buttery, rich bread and summer fruit. We were destined for success!

I missed the Farmer's Market this week (again!!) and picked up some nectarines, peaches, red plums and black velvet apricots at my local store. I've never had the black velvet apricot (pictured above)...but its skin is sorta velvety! The inside is like an apricot.

I made the dough last night and got up at 3:20 am to make this tart! If I fall asleep while answering reference questions later today, just feed me a piece of this and I'm sure I'll perk right up.

A layer of peach jam was spread on the brioche dough. Then my various stone fruits were placed on top.

And what happens when you make something before dawn? You "misread" the directions. I thought I was supposed to mix the fruit and sugar together (like a pie) and let things macerate for 30 minutes during the 1st rise in the pan cycle. However, when I reread the directions after the tart was in the oven (yes, this IS the best time to reread the directions!), it turned out the sugar was supposed to go on top of the fruit. Thus, I got no caramelization. Oh well, it's still yummy!

Food Librarian - Katharine Hepburn Brownies

For this week's Tuesdays with Dorie selection, Lisa of Surviving Oz chose Tribute to Katharine Hepburn Brownies on pages 96 and 97 of Dorie's book, Baking: From My Home to Yours. Lisa designed our group's new logo! Isn't it grand?!



Dorie writes in her book:
After Katharine Hepburn died, eulogies came from every quarter, many including stories about her brownies. In an article sent to me by my friend Bon Appetit editor in chief Barbara Fairchild, Heather Henderson of St. Paul, Minnesota, recalled wanting to quit her studies at Bryn Mawr. Her father managed to get Miss Hepburn, a Bryn Mawr alum and a neighbor, to intervene. The famous Kate invited both the young woman and her father to her home one afternoon. At tea, Ms. Henderson got a taste of the legendary brownies as well as of the actress's views on education.

In her tribute to the actress, Ms. Henderson wrote, "I'll always be grateful to Miss Hepburn for making me stick it out at Bryn Mawr and for giving me these rules to live by: 1. Never quit; 2. Be yourself and 3. Don't put too much flour in your brownies."

And just like Katharine dictates, this has really very very little flour! 1/4 cup for an 8" square!

I also used 1 1/2 t of espresso powder instead of 2 t of instant coffee. I think I put in a wee bit too much espresso. The brownies were very fudgy, and I'm more of a cake brownie girl, but they were fun to make! Very very easy. You only really need a saucepan!
