Great Grains Muffins
For this week's Tuesdays with Dorie selection, Christine of Happy Tummy chose Great Grains Muffins on pages 8-9 of Dorie's book, Baking: From My Home to Yours.
I made these about 45 minutes ago. I'm heading out the door for work now...can't write much! :) I added dried cranberries and golden raisins instead of prunes (didn't have any). I skipped the nuts too. Next time, I'm going to bake mine a little longer to get more of a golden color (dude, I was in a hurry!)
This recipe has all-purpose flour, whole wheat flour, corn meal and old fashioned rolled oats. So, I don't feel too bad eating them! Ha ha. Of course, I'm eating them with a massive chocolate chip cookie I made last night...that post is coming up!
To those in 1/3 of the country who are affected by the latest blizzard, good luck and bundle up. You might want to throw together these muffins and have some after shoveling snow.
