For this month's Martha Stewart's Cupcake Club, Jennifer from Cinema Cupcakes chose Coconut Cupcakes on pages 28-29 of Martha's fantastic book: Martha Stewart's Cupcake Book. Sorry for the delay in the post...I feel asleep instead of making these on Friday!

As I've mentioned on the blog several times, I have a love/hate relationship with coconut. Love the flavor, hate the strands. I knew these would be going straight to work! :)

This cupcake uses coconut milk and food processed coconut flakes. I didn't feel like making the frosting. Yesterday in my baking class (post coming soon), it was all about frosting and I was kinda frosted out. Also, several on-time bakers thought the cupcake was perfect without frosting...so I took their advice and just dusted them with some powdered sugar.

We are about to enter a week of lotsa rain in Los Angeles. A place where we flood because our poor drainage system is made for the desert and not a downpour. I think celebrities are going to line up two-by-two at the Hollywood sign! ;) Wish us luck!

My frosting didn't work, so I probably should have gone your route. I like the way yours look. The powdered sugar is really pretty (prettier than my sad frosting)

I sometimes prefer my cupcakes without frosting. It's simpler and a much lighter dessert. Yours look delicious, and the powdered sugar is a great touch!

I'm with you on the taste but not the textrure of coconut!

I've had trouble with some of the MS cupcake icing recipes.

I think sometimes cupcakes are better without frosting! A little sprinkle of sugar is great.

These cakes soooo didn't need to frosting. Your sugar dusting finishes them off quite fine.

Your cupcakes look simple and sweet - and I think they are great with or without frosting. Imagine being "frosted out!"

I put just a smidgeon of frosting - the cake was so good, even without it! Love the way these look with confectioner's sugar - light and fluffy!

Oh man, just coming to visit you and seeing these cupcakes again makes me wish I still had a few left. I would definitely leave the frosting off next time because I thought these were plenty delicious without it. Too bad you aren't a coconut fan because these were delicious!
