Martha Stewart's Zucchini Spice Cupcakes


I bought Martha Stewart's new Cupcakes book on "opening" weekend. However, I have yet to make anything in it!

I had good reason to try the Zucchini-Spice cupcakes first. See below.

Martha Stewart's Cupcakes book suggests a cream cheese frosting (which would be lovely). But I was out of cream cheese...so I made a quick glaze of powdered sugar, vanilla extract and water. I think I probably saved about 100 calories each too!

I got these cool cupcake liners at, well, where else? Surfas in Culver City, California. They are basically squares of parchment folded into pretty little things.

Note to Mary of Popsicles and Sandy Feet: When you and the family come out to Disneyland, I'll go with you to both Disneyland AND Surfas! :)

The cupcake is very moist and easy to make. It is dairy-free, and I used olive oil instead of canola oil.

I poured a wee bit too much in each cup and ended up with 20 cupcakes instead of 24. I also ended up baking them for about 35 minutes instead of 20 minutes. Because these liners are really tall, I had the pans on the top and bottom racks. If I use these liners again, I'll try baking them separately and in the middle. So watch the time and size of your cupcakes!

When you are gifted with some zucchini, make sure to make this tasty treat!

Looks so yum! My mum-in-law loves zucchini bread so I think she'd love this. I almost picked up the book while I was in NYC the other day... now I wish I did!

I almost made these yesterday. I came SO close! But I didn't have any canola oil and I was afraid of subbing olive oil. I wasn't sure how the flavor would turn out- but it seems they would have been just fine.

I ended up making a delicious zuke muffin with peach jam and dried cherries. Yum!

Your photos are so unique and I love those liners. I saw some that were similar on Martha a while back. The brown ones are especialy nice!

OHhh, those look so good and I love the cupcake papers. Cute idea for something a little more than just the plain ole' papers. I found zuch. muffins freeze so well, while zucchini is abundant, I froze a bunch.

I love zucchini bread, but muffins are even better. These in particular look great with all the spices. I love how zucchini keeps everything nice and moist (and you can pretend they are healthy).

Everything I've tried from Martha Stewart's Cupcakes cookbook is delicious. I'm about to try making these (zucchini spice), but I've made the raspberry marble cheesecakes (p.99) and the cookies and cream cheesecakes (p.104) many times that are cupcake size mini-cheesecakes and unbelievably yummy. Can never just eat one.
